I'd be perfectly happy with cold cereal, but DH is one of those who needs 3 hots a day, with meat in every single meal. Sigh. And we do not have whole-house AC, just a single window unit in the family room.
So I'm going with salads with grilled chicken, one night with buffalo sauce and blue cheese, one night with Caesar dressing and croutons. Leftover taco meat that I can heat in the microwave, everyone can make their own tacos. And pizza delivery. Hopefully after that it will either cool off, or he'll want to go sit someplace that serves a good burger, a cold beer, and has AC. 😆

I made something today that was fast, cheap, easy and healthy.

1 can of cannellini beans
1/2 jar of pasta sauce

Heat in a sauce pan...eat. It was surprisingly creamy and tasty!

Got a good deal on eggs at the supermarket, so egg salad sandwiches on fresh bread.

Egg salad & fresh buns are my trademark, I guess. It’s what I bring when making a bereavement call.

Eaten all in good fun. And yes, I eat them often.

My mom used to make something like that. She called them "onion sandwiches." She said it was a recipe from the depression.
