Hi everyone,
I am hoping you guys can help me figure out a recipe. A man that works with me made an apple cake that was wonderful. When I asked him if he would share the recipe, he said no, that it was his grandmother's recipe and couldn't share it. I usually don't like apple cake or spice cakes of any kind. But this one was so good I really want to make it for my family. So.....I am hoping we can figure it out. It was a sheet cake that was so moist. It had an icing that was cooked, sugary, brown colored, and pretty thin as it soaked into the cake. What didn't soak into the cake hardened a little. Does this recipe ring a bell with anyone? I think I can help you with the recipe, but not the icing as I have never put icing on mine. Mine is called "German Raw Apple Cake" and was given to me by my husband's grandmother, so I have had it for over 40 years. I do believe she put some type of icing on it years ago, but I never thought it needed it as it was so good without it. Hope this helps.
German Raw Apple Cake 4 c. chopped raw apples 1 c. chopped nuts Place apples and nuts in a large bowl and sift over the top: 2 c. flour 2 c. sugar 2 tsp baking soda 2 tsp. cinnamon 1 tsp. salt Mix well until apples and nuts are coated. Add a beaten mixture of 2 eggs, ½ c. oil and 2 tsp. vanilla Mix well until all ingredients are blended. Bake in oblong pan, greased and floured, for 45 min at 350-375 degrees. As an interesting sidenote, my husband submitted this recipe for a fire department cookbook many years ago, but when they printed it, they left out the sugar. Made for a lot of phone calls after the cookbook was published with my DH's name as contributor. |

Fresh Apple Cake INGREDIENTS 2 eggs, beaten 2 cups white sugar 1/2 cup vegetable oil 1 teaspoon vanilla extract 2 cups all-purpose flour ½ teaspoon salt 1 teaspoons baking soda 2 teaspoons ground cinnamon ¼ teaspoon nutmeg 1 cup chopped walnuts or pecans 4 cups chopped apples DIRECTIONS 1.Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. In a medium bowl, stir together the sugar and apples, set aside. Sift together the flour, baking soda, cinnamon, nutmeg and salt. 2. In a large bowl, stir together the oil, eggs and vanilla. Add the apples and sugar, mix well. Stir in the dry ingredients, then the nuts. Pour into the prepared pan and spread evenly. 3. Bake in the preheated oven for 45 minutes, or until cake springs back to the touch. 4. Ice with Cream Cheese Frosting: 1/8th cup half & half 1 ½ cup powdered sugar 1 pkg cream cheese softened 3 tablespoon butter ½ tsp vanilla YUMMY!!!! |
Vannesa maybe if after bakins the cake cover with brown sugar and broil it for couple minutes like cream brule ,no?

BROWN SUGAR FROSTING
1 1/2 c. firmly packed light brown sugar 1/4 c. milk (or half & half -liquid non dairy creamer is good too) 3 tbsp. butter 1 tsp. vanilla Place first 3 ingredients in heavy saucepan. Mix until sugar is moistened. Bring to full boil, stirring occasionally. Boil exactly 3 minutes (soft ball stage). Remove from heat and add vanilla. Place pan in cool water in sink and beat contents until cool. This frosting thickens quickly once cool. If it gets too thick, add a small amount of milk and beat until spreadable. Frosts 9 inch cake. |

2 Tbsp Butter 2 Tbsp Cream or Milk 1/2 cup Brown Sugar Heat to boil, then pour over hot cake (sometimes I poke holes in the cake). My husband loves how the carmelizes on the bottom and almost tastes like carmel. This recipe is only for a 1 round layer cake pan, so for a sheet cake you will probably want to double it. |
The cream cheese is 3 ounces or 8 ounces? You didn't mention if it was the small size or the large size.

Would you please post the recipe for the Mandarin Orange Cake? It sounds wonderful.
BTW, when you double everything for the larger sized cake, add a couple of Tbsp. of rum. Wheeeee. |

this may be the recipe you are looking for, it is german. Idun's Kaffe Kake CAKE: 1/2 cup butter, 1 cup sugar, 2 eggs, 1 tsp vanilla,2 cups finely chopped apples,1/4 tsp salt, 1 tsp baking powder,1 tsp baking soda 1 cup sour cream,2 cups flour. cream together sugar and butter, then add the eggs and vanilla. mix and then add the dry ingredients. add sour cream and fold in the apples. pour into a 13"by9" baking pan and sprinkle a mixture of 1/2 cup brown sugar,1 tsp cinnamon, 1 tblsp butter and 1/2 cup walnuts on top of the cake batter. bake at 350 for 35 to 40 mins.
