Thanks so much for this recipe. I love all the recipes from Southern Living magazine. Plan to make it this weekend.

Aw, I am so relieved - when I read the title of this thread, I was thinking how may humming birds would it take to make a cake? LOL

It's my favorite cake, I bake it every year for one of my club meetings, and sometimes for Easter Sunday dinner.

Every year our church has a cake auction to raise money for the women's mission work. There is a lady that makes this cake with the posted recipe and they always bring the highest bid. Each year the same man purchases it. (His wife doesn't bake) Last year he paid $75.00 for it! Ann in TN

I ate a piece of this cake one year at work (when I lived in Tennessee) and went home and cleaned the whole house. It is very delicious!

Hummingbird Cake

3 c. flour
1-1/2 c. sugar
1 tsp. salt
1 tsp. soda
1 tsp. cinnamon

3 eggs - beaten
1-1/2 c. salad oil
1-1/2 tsp. vanilla
1 8 oz. can crushed pineapple with juice
1 c. chopped pecans (I used walnuts)
2 c. chopped bananas

Combine dry ingredients. Add eggs and oil and stir until dry ingredients are moist. Do not beat or cake will be tough. Stir in vanilla, pineapple, nuts and bananas. Put in well greased 9" x 13" pan. Bake at 350 deg. for 55 min. Cool at least 15 minutes.

Love, love hummingbird cake. I have only made one for a boss who doesn't eat chocolate (weird, right?) and it was so yummy.

You will love this - it is one of the best cakes I've ever baked. I'm not much of a cook, but this one is really easy and pretty hard to screw up!
