1 cup finely shredded zucchini
1/4 cup cooking oil
1 egg

Bake at 350 till toothpick comes out clean. Makes 1 full size loaf or 3 mini-loaves.

This is the only zucchini bread recipe I use now. It's SO good! I use regular chocolate chips instead of mini's. Enjoy!

BANANA BREAD
1 cup sugar
1/2 cup oil
3 tbsp. milk
2 eggs
1 cup mashed banana
1 1/2 cups flour
1/2 cups quick cook oats
1/2 tsp. cinnamon
dash of nutmeg
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
1 cup chopped nuts
OR
1/2 cup chopped nuts and 1/2 cup craisins or raisins
Stir dry ingredients together.
In separate large bowl mix sugar and oil. Add beaten eggs, banana and milk. Add flour mixture. Stir until well blended. Add vanilla, nuts and raisins. Bake in well greased loaf pan for 1 hour at 350*.
Or makes about 18 muffins - bake 20 minutes.

I fiddled with a recipe my MIL gave me and this is what I use now.

For me walnuts are the best for flavor in quick breads.

Don't forget the bread freezes well.

Have fun camping.

I found this recipe some years back and really like it: www.food.com/recipe/every-which-way-quick-bread-28409 I've done it with nearly everything I can think of including bananas and it's always a hit. I even tried diced peaches once with a little nutmeg and everyone loved it.

I tried the zucchini-blueberry bread recipe last night, and it's marvelous! I added another egg, mainly because we have dozens to get rid of. Thanks, you darling girl, for sharing this recipe!
