ISO recipe for dill based salad
Hello everyone, I am in search of a recipe that has fresh dill with cucumber, tomato and red onion in it. The dressing does not have any visible oil, and no strong taste of vinegar. Also, there was no excess dressing in the bowl. I had this salad at a bbq and really liked it. The person who brought it is one of those people who promises to share her recipe but never does... I went through this when I asked for her mac and cheese recipe because my husband loves mac and cheese but is a bit picky over the "recipe" - hers met his needs. She promised several times to "look when I get home and send it", but never did, even if I texted when she was home... it's just how she is.... I no longer ask, because she does not share. But she is willing to ask for others' recipes.... very frustrating....
I have tried a few recipes I've found on line but they're all too heavy/oily/vinegary.... Anyway - if anyone has any suggestions I am listening.... |
You have me intrigued ... the only thing that comes to mind would be the old fashioned vinegar mixed with sugar mix as a marinade. However, despite the sugar, to me it still is vinegary. But maybe? the right proportions would solve that?
As for recipe sharers ... my sister has a friend that shares recipes ... but has admitted, that she never gives "the" recipe as she made it. Changes an ingredient or quantities. Or leaves out that magic ingredient that makes the recipe "pop". All so you cannot duplicate ... and she can remain the Queen of her delights! Unbelievable! |

There's some good looking recipes with lemon or lime juice, honey and oil. I'm not linking to any, being that I have not tried them, but am intrigued. If anyone does give one a try, please share your review. Also, have been thinking about your comment about no trace of oil. I'm thinking if the proportions were right, and the dressing/marinade was drained before serving, you might not notice the oil. IOW don't shy away from "with oil" recipes! Hoping to see some new recipes posted ... to add to my repertoire!! Thank you! |
Ina Garden has an oil free one that looks yummy. She uses White Wine Vinegar instead of plain white or Apple cider Vinegar which I find has a less harsh taste to it,

That sounds really fresh and tasty! Maybe try a light lemon juice and a bit of Greek yogurt for the dressing.It gives creaminess without oil or strong vinegar taste. Hope you find a match!

What about using rice vinegar, or lemon instead of vinegar? also, just a tiny bit of sugar, or homey might cut the acidity.
