I make mine lime, same recipe but use bottled lime juice and grated peel instead of lemon. If several people are making goodies there are bound to be other lemon bars, but not lime!

These do look great, but my hubby is diabetic - so corn syrup is a no-no.

Now my secret- I buy 2 mixes that come in envelopes, and follow the recipe except I add an extra egg to the mix. Press the dough into a jelly roll pan, and bake at 25 degrees cooler than directed, and bake for about 20 minutes. Allow to cool 10 minutes before cutting and removing from the pan. Yum!

I prefer making squares as well, I think I suffer from ADD because even with the timer on I always carmalize/burn my last pan of cookies.

Naniamo Bars are a no bake Canadian classic. They are delicious.

Thanks for all of the suggestions and recipes, the buttertart squares look good and easy, too. Might give them a whirl. Easier than butter tarts.
