Kale Recipes
 
I know...we're probably all, "kaled to death," but I had to buy some greens yesterday and they had a giant bag of kale on sale. We didn't get our spring kale planted in the garden this year, so I went ahead and bought some. Now, I have to eat it up quickly, or it'll go to the chickens, or compost.

Here are some good, vegan, kale recipes.

These are good to make in cooler weather. They’re also good without the garlic.

I cut up kale after I pull it from the stem. I bruise it with my fingers and add a homemade vinaigrette. Add onions, tomatoes, cukes, whatever you like. Let sit for a half hour or more. The bruising combined with the dressing softens the texture of the kale and makes the salad easy to eat.

Thanks, Tropit. I eat a lot of greens and sometimes get tired of fixing them the same way. New recipes are great!

Thanks guys! (In so many ways.) I'll check them out.

I remember the first time I read that I had to massage the kale. I had some funny images in my mind..ha ha! It really does help to soften the kale and help it to absorb the dressing. Who knew?

Kale and Sweet Potato Pilaf

This one is from WW, so I'll just list the ingredients and you can figure out how to put it together.

Brown Rice, uncooked
Onion, chopped
Ginger Root, minced
Sweet Potato, large, diced
Coriander
S&P
Broth, veggie, or chicken
Kale
Butter
Chives, chopped

They cooked the rice in the broth in either a braising pan, or an instapot. Then, they added in all of the veggies, cooked until done. Served

sad to say, I am not a kale fan, I wanted to be, but it just did not happen. I will keep on eating my broccolli

Before the current Kale super food craze, Pizza Hut was the largest single purchaser in the US.

They used it to line their salad bars, not to eat. Just saying...
