Kidney Bean Recipes, Please
 
I just made a list of my pantry items and found that I had 24 cans of kidney beans. Can you believe it? As my workmates used to say, I "am organizationally impaired."

Other than chili, what recipes do you make with kidney beans? I used to use them in my salad, but with 24 cans, I will get really tired of it, really fast. Thanks in advance for the recipes. :o

I would make chili to freeze and a big bowl of salad and donate the rest to a food pantry.

Try cooking with whatever meat you like,onion & celery,green peppers & seasoning of choice.Drain & add to tacos.We also like them just heated with a sprinkle of shredded cheese.Red beans & rice,calico beans,add to any baked bean recipe.Google or try allrecipes.com

Three bean salad (green beans, garbanzo beans, kidney beans)
Nachos with cheese and kidney beans
Add to baked beans
Cook with sausage and serve with rice
Use in sloppy joes
Kidney bean cake (just google for recipes... I've made chocolate cake with black beans and it was actually pretty good)

we eat it as a main dish served over corn bread. Also sub butter beans for the lima beans cause we like them better

I make 1 can kidney, shell beans, or lima beans and 1 can corn and add onion or bacon fried and make mash potato and put on top. cn put in oven and brown a bit. depends how many you feed at one meal.

Here's one that we love:
Four Bean Casserole

1 can lima beans
1 can kidney beans
1 can pork and beans
1 can butter beans
1 lb bacon
4 large onions
1/3 C vinegar
3/4 C brown sugar
1 T dry mustard

Cook together bacon, onions, vinegar, brown sugar and mustard. Simmer 20 mins. Add all beans. Bake in large casserole dish for 2 hours @ 325. Serves 10-12

This is from the little cook book that came with an old crock pot. It was called Husband Pleasin' bean pot.

1 chopped onion
3 strips bacon
1 pound hamburger

cook together until onion translucent

1 can butter lima beans drained
1 can red kidney beans drained
2 cans pork and beans not drained
2 cans Northern white beans drained

1/4 cup brown sugar
3 tablespoons white vinegar
1 teaspoon dry yellow mustard
1 cup ketchup
1 teaspoon liquid smoke
salt and pepper to taste

Crock pot at least 1 hour, but can be left all day on low

Has to be served in bowls with spoons as it is like a chili or stew.

This is much like another recipe here, but has hamburger.

I have used them in pasta salad. But you must rinse and drain them first. I have also used them in rice and ground beef dishes and have also used them in taco meat for tacos. One of my favorite is broccoli salad that has raisins and mayonnaise in it I rinse the beans and drain them very well and add them to it and it is good.

And yet another...
drain, but don't rinse 1 can of kidney beans
add 1 chopped green pepper
1 diced stalk celery
Dollop of sour cream
A "bit" of sugar to taste
mix and refrigerate for about 1 hour---serve

a bit of something different to add to table at mealtime.

Growing up my mother fried a couple of strips of bacon (cut small) and poured a can of kidney beans over them until warm. They are delicious with meatloaf or pork chops.

With 24 cans, I suppose some are too outdated to sent to a food pantry. But that doesn't mean you can't eat them yourself. One can a month and they will be gone in two years. Take a bean dish to every pot luck and more will be gone. But don't go buying more in the meantime. LOL

pocoellie, I have a quart jar of home canned mixed beans and will add as you directed. A rainy day tomorrow and will be perfect to warm me up.

I make vegetable soup with chicken and put a can or two of beans in at the end instead of noodles. Much healthier yet still satisfying. We also make egg burritos for breakfast and put a can of beans in.

Multi-Bean Minestrone


1Cup chopped onion
1 C. chopped carrots
1 C. chopped celery
3 cloves garlic
2 T. olive oil
1 28 0z can tomatoes
1 tsp. Basil
1 tsp oregano
½ tsp chilli flakes
2 cups of stock
1 cup chopped zucchini
½ bag baby spinach
3 cans of beans of different kinds drained and rinsed ( chick peas, romano, Kidney, white, lentils)
Salt and Pepper
Grated Parmesan cheese


Saute onion, carrot , celery and garlic in oil in large pot for 2-3 mins.. Add tomatoes, herbs, chilli flakes, stock and zucchini. Simmer for 10 mins.


Add beans and simmer for 5 mins.


Serve with good bread and sprinkle with parmesan. Will freeze very well. Is very thick!!!

Freckles48, that sounds like a wonderful winter soup. It's has been cold and rainy here in California, the perfect recipe for this kind of weather. I'll get out my bread machine and make some French/Italian Bread.

Only 18 cans of kidney beans to go...:rolleyes:

My mother used to make (and now I do) kidney beans and corn with a can of evaporated milk, onion some bits of bacon if we have it.....mash potato dropped on top if desired and we called it succotash.
