LEFTOVER TURKEY TORTILLAS
1 lb. sliced turkey breast 1 (16 oz.) jar salsa 6 (7-8 inch) flour tortillas 5 slices cheddar cheese 2 tbsp. sour cream 1 green onion, sliced 1 tbsp. chopped red or green pepper Cut turkey breast slices into long strips. In bowl, combine turkey with salsa. Arrange 1/6 turkey mixture on each tortilla; roll up. Place tortillas, seam side down, in 12 x 8 inch baking dish. Cook uncovered, on high 3-4 minutes until cheese melts. Top each tortilla with 1 teaspoon sour cream; sprinkle with green onion and red or green pepper. Garnish with jalapeno pepper slices, if desired. |
