Lemon curd. It's sold out in about every store.
 
I found one store that had a few jars of lemon curd. Not the best brand but I was desperate. It's my addiction. LOL
It was of course way to sweet and no tart lemon taste. I put it in bowl and added fresh squeezed lemon juice a little at a time until I got the perfect taste. It took a lot of lemon juice and a little salt. I think this is one reason so many don't like some foods. They get the first taste from a low quality brand so it's a no thank you from now on. If you want to try a new food buy the more expensive which is usually the higher quality first then buy down until you can tell the difference. There is usually a middle ground.

I can not understand some of the shortages that have come with this crisis. I finally was able to source yeast from a catering company in my city.

I know...the shortages are just strange. One day they have it and the next week the whole shelf is empty.

Lemon Curd is very easy to make, ya know. You can make it as sour and tangy as you want too. There's recipes everywhere, but if you don't find one, I'll post one for you.

Oh please, would you post a recipe? I know it should be easy enough to make, but rather than surf around, I would sooner first make it with a recipe that I know has actually been made by someone I "know". Please? and Thanks!!!


As for missing items in the stores. Some are missing because the packaging needed (eg. plastic bottles/tubs, printed paper packaging, etc.) have been used up and they can't be re-made ASAP. Some reasons for that can be lack of the raw materials, or the supplier is shutdown because of COVID. Or they have shifted to producing more needed items because of COVID.

I use to make lemon curd all the time but found a brand that was just as good as my homemade. The lemons at the grocery didn't look all that great and I'm getting lazy the older I get.

It costs me almost $6 for ingredients (more if using organic ingredients) to make lemon curd not counting my time, clean up, and heat used. I can buy organic curd for the same price and get a nice glass jar to have individual cream dessert containers.

I've made lemon curd from my old, Martha Stewart cookbook and this one is very similar. I found it on Martha Stewart's website:https://www.marthastewart.com/348239/lemon-curd. I think that when it comes to things like lemon curd, Martha knows her stuff. I'd guess that you might be able to half this recipe. It makes a lot of curd.

The other recipe I've made is from Joy of Cooking. I can't find that right now, but I'll look around. (BTW, Joy of Cooking's Lemon Bars Cockaigne recipe is absolutely the best.)

I use my Vitamix to make lemon curd using the Vitamix website recipe. There are other blender recipes out there and it is really easy. Though I have never done it, I have seen microwave recipes for lemon curd.
I also put leftovers in small mason jars and freeze. It keeps well and if the craving gets too strong, you can eat it frozen right out of the jar!
Can you tell......I love lemon curd!!!

Yum, now I want lemon curd! Yes I’ve made it with the recipe in that old Martha Stewart cookbook. It is pretty easy to make. I would recommend straining it through a sieve after it’s done. Once I didn’t do that and there were a lot of tiny pieces of cooked egg in my pie.

We finally got yeast in one of our 3 stores. Wasn't out but decided to buy a jar just in case it goes missing again. Seems the stores are starting to be able to keep up with items that were scarce for so long. Butter is another item that's scarce. Plus the price of meats have risen sky high. Sure glad I stocked up before this happen as I refuse to pay those ungodly prices. Will go vegetarian before that happens.
