lenten recipes
 
I am interested in some Lenten recipes (meatless) such as fish or a good casserole. Does anyone have one? thx

I make chili without the meat,adding a couple different varieties if beans,spaghetti sauce with veggies(peppers,zucchini,onions,mushrooms) instead if meat, multi- bean soup withou ham,,macaroni and cheese...
vegetable soup...

I like "louisa's" pasta...its in the freezer case and made here in St. Louis. there are other brands, I think WalMart has its own, too. Its frozen cheese filled raviolli, tortelin, canneloni and other varities of pasta.....just boil for 5 minutes and add your favorite spaghetti sauce. Its a cheap and fast meal....along with a salad/bread.

Our traditional Lenten meal is quiche. I make a spinach-mushroom-Swiss cheese one that my husband likes, but you could do broccoli and cheese. That with a salad or fruit makes a nice meal. We do have fish on Fridays, but we like it so it doesn't seem like much of a sacrifice. Now, mac and cheese, which I love would be a BIG sacrifice for hubby! Or frozen stuffed shells with meatless marinara sauce, baked covered in the oven, then covered with cheese and browned is good too. I have a salmon chowder recipe i need to pull out for this week. Thanks for the prompt!

My mother and I really enjoy this recipe.

CORN AND WHITE BEAN MAQUE CHOUX

Ingredients

• 2 tablespoons olive oil
• 1 small onion, diced
• 1 clove garlic, chopped
• 1 Roma tomato, diced
• 1 red pepper, diced
• 1 green pepper, diced
• 1 teaspoon ground cumin
• 1 teaspoon ground coriander
• 1 teaspoon chili powder
• 2 (10-ounce) boxes frozen corn kernels, thawed
• 2 (15-ounce) cans great Northern beans, drained
• 1 teaspoon salt
• 1 teaspoon black pepper
• 1 stick butter, cut into small pieces

Directions

Pour olive oil into a large pot and place over medium heat. Add the onion, garlic, tomato, peppers, cumin, coriander and chili powder. Cook the vegetables, stirring often, until translucent and soft, about 15 minutes.

Add the corn and white beans to the pot and cook until heated through. Gently stir and season with salt and pepper. Add the butter and stir until melted. Serve immediately.


We also enjoy a Crustless Onion and Swiss Quiche. Sometimes we add asparagus or frozen peas.

My very favorite, since I was a kid, is "Mom's Enchiladas"

Mom didn't like corn tortillas so she always made flour ones ( yes, she made them!)
boiled potatoes, chopped fine(or buy frozen hash browns)
cheddar cheese, grated
chopped sweet onion
mix all together

heat enchilada sauce, dip tortillas in sauce, remove, place on a plate put on potato mixture, roll up, place in sprayed baking dish. Make as many as you want. it's messy, but soooo worth it.

cover with lid or alum foil bake 350 20/30 min. remove lid/foil top with more grated cheese boil till cheese bubbles.
serve have a little extra sauce on the side.

All I have to say to my adult kids and step kids is "I'm making enchiladas"! Full house!

This is one of my favorites. If it's not lent then I top with crumbled Bacon. Easy to make.

Cheese Sandwich Pie
2 servings
1 egg
3/4 cup flour
1/2 tsp salt
1/8 tsp pepper
1 cup milk
1 cup grated Muenster Cheese (4 oz.)
5 slicess bacon, cooked (optional)

Mix egg, flour, salt, pepper, 1/2 cup milk and beat until smooth
Stir in 1/2 of cheese and remaining milk
Pour into greased 8" pie plate
Bake 425 30 minutes
Sprinkle with remaining cheese and top with bacon if desired
Bake 2 minutes more to melt cheese

My Mother's "Nothing" soup is always delish. It is called Nothing because it does not contain meat or fish. Starts with a large can of vegtable juice. add celery,carrots, onions, potatoes, and pasta if you want. You must add "BUTTER". A stick will do. Tha butter is the fat and the flavor. Add white beans or anything you like. It all cooks in a half-hour.


p.s. I use V-8 juice.
