Lima Beans
Not my first choice in a vegetable, but last night lima beans were delicious! I warmed 4 ounces of cream cheese and about 2 tablespoons of picante sauce in a square glass casserole dish. then stirred to mix. Added half an onion that was chopped and grilled and a drained can of lima beans. Baked at 350 for 25 minutes.

Lima beans are one of the few vegetables one of my grandsons will eat without being told to. LOL I buy canned. Rinse. Add some cut up raw bacon and simmer in chicken broth until bacon is cooked. Salt and pepper to taste.

This recipe for lima beans sounds really yummy!!! I didn’t like limas when I was much younger- but that changed when I had them at my Aunt’s house about 30 years or so ago. I don’t remember what she did but I do remember lots of butter, salt and pepper. Thank you for something new to make them.

I like Lima beans but have gotten bored with my recipes. This one sounds so good and I am going to try it. All the ingredients are ones I like. After I find out if I like it, I may try to make it with some homemade Kefir.

I make Lima bean hummus in a food processor with olive oil and lemon, salt and pepper. It is yummy

Love those Limas! One of the foods that I missed the most during COVID shortages was frozen lima beans. My favorite recipe is a bowl of beans with small cubes of ham. I cook the beans and drop in the ham shortly, like a minute, before the bean are cooked, drain and search for my spoon. No need for salt but a dash of pepper is all that is needed to make me happy. Comfort food for me!

Our younger daughters has always loved lima beans. I always bought the baby limas, frozen. Cook them and put a little butter on. I don't mind them, DH hates them. I don't think I've made them since she grew up and moved out, lol.

Update! Cooked frozen cut asparagus the same way last night! Yum!
