Mom always made Poor Man's Cake - named because it used no eggs or milk. Google that you will find several. My mom added gum drops to the recipe and it is our tradition at Christmas time.

LadyRebel ... you've peaked my interest, with it being without eggs, milk and butter. And I'm sure that many others would like to see the recipe too.
Would you please consider posting it for us all to enjoy? Please? and Thanks! |
This is from the Ladies Aid group 1942 Methodist Church International Falls Minnesota
Boiled Raisin Cake or Poor Man's Cake 2 cup white sugar 1/2 cup lard pinch of salt 1 cup raisins 2 cup hot water 1/2 cup butter 1 tsp cloves 1 tsp cinnamon Boil 1 minute. Take off flame and add 2 tsp baking soda. Let cool and add 3 cups flour. Bake in moderate oven. Great Grandma, Mrs. J. Valentine My mother used to add candied fruit during the holidays for a mock fruit cake. I believe it baked for about 1 hour. Hope this helps you. |

Well, I'd sure like to "watch" this thread w/o having to post to it -- but no such simple thing as "watch" to click on
anymore! What the devil does 'subscribe' mean? Is it the same thing as the old "watch"? Tried 'subscribing' to two items but to no avail. New & Improved? NOT! (In fact, now editing this posting to say it took THREE tries to finally get it on here. Good grief!) |
ww11 and depression cake are one and the same.

Here's the recipe that I have:
Poor Man's Cake 2 cups water 1 cup raisins Cook together for a few minutes to plump raisins Save 3/4 cup of juice for dough Cream together: 3/4 cup white sugar 1/4 cup butter or margarine Add 1 egg to creamed mix. Add reserved juice. Sift together: 2 cups flour 1/2 tsp. baking soda 1 tsp cinnamon 1 tsp. nutmeg 1/2 tsp. salt Add to creamed mixture. Stir in raisins. Bake in a 10" x 15" baking sheet at 350 degrees for 20 to 25 minutes. Frosting 1 cup powdered sugarand enough orange juice to make spreadable. Spread on hot cake. I never made this cake. The recipe came from my aunt, who would have been 100 years old this year. |

Patience .... we've all had to practice a little of this as we learn and adapt to the changes. |

Whats the big secret? can't you just share! |
As a child, my friend's mother made this all the time and I thought it was quite delicious. She had grown up in the depression and maintained many frugal ways. Now, I have trouble with the bacon drippings part but always take this cake to school for my history students.
Eggless, Milkless, Butterless Cake 1 cup brown sugar 1 cup water 1 cup raisins 2 tbsp. bacon drippings 1/2 tsp. salt 1-1/2 cup flour 3/4 tsp soda 1/2 tsp powdered ginger 1 tsp. cinnamon Cook first five ingredients together. Allow to cool. Add dry ingredients to cooled raisin mixture. Bake in greased loaf pan at 325-350 oven for 1 hour. |
If you don't want to use the bacon drippings, then use butter!!
|
Hi! I also had the recipe from the back of the SunMaid raisin box. That is the only one I ever knew. I just downloaded it from their website. Years ago I use to bake it at Christmas time and give as gifts, I hope this recipe is what you are looking for; if not the same maybe give it a try. It may be a good substitute for your g-mother's.
Good luck. |
thanks for the re; I lost my copy! couldn't find it anywhere! again thanks!!

I have three recipes from my mother that are WWII or earlier that might fit the bill.
Eggless Raisin cake Boil 1 cup raisins in two cups water for 10 mins. Add 1/2 cup butter or oleo and let cool. Add 1 3/4 cup flour, 1 tsp baking soda, 1/2 tsp salt, 1 cup sugar, 1/2 tsp cinnamon and 1/2 tsp nutmeg. Bake in greased flat pan. Cream mayonnaise & sugar. Sift all dry ing together, 2 cups cake flour, 1 tsp baking soda, 1/4 tsp salt, 1 tsp cinnamon, 1 Tbls cocoa. Mix into wet ing and mix well. Add 1 tsp vanilla and 3/4 cup chopped nuts. Bake in two layers in greased and floured tins for 45 mins @ 350. Frost with your favorite frosting. Tomato Mystery Cake 2 Tbls shortening, 1 cup sugar, 1 1/2 cups flour, 1 tsp nutmeg, 1 tsp baking soda, 1 tsp cinnamon, 1 tsp cloves, 1/4 tsp salt, 3/4 cup raisins, 1 cup walnuts chopped, 1 can tomato soup. Cream shortening & sugar. Sift flour, all spices, salt & soda. Add walnuts & raisins, mix throughly add tomato soup, mix well. Bake 40 mins at 375. Frost when cool. Hope these help. |
