Quick and easy and very tasty. You can doctor it up with a little salsa or some tabasco if you like. Edie |
My Spanish rice has evolved into a full blown one dish quick supper. Brown ground beef, chopped onion, chopped green pepper, add garlic, taco seasonings or other spices of choice, 2 cans chopped tomatoes (one with green chilies), simmer while rice cooks in microwave. Add rice, eat. Serve with tortilla chips or garlic bread. Good substitute for spagetti for those on gluten free diet.

Thanks. Good recipe for days you spend quilting. Best if you break up the beef into very small pieces while it is browning not leave it too chunked.

I had a SIL who was Mexican. She sauted the rice in oil for a few minutes, added tomato paste, seasonings and then water and let it cook. It was the best I've ever had. Wish I had paid attention to the seasonings though.

A very good Mexican friend of mine gave me this recipe, she has sense past away, enjoy.
Cookie SPANISH RICE 1 c Long Grain White Rice ½ Onion (small) Chopped Cumin (Ground) Ground Pepper Crushed Garlic (or Garlic Salt) Salt (if you use Garlic Salt you might not need) Chicken Bouillon (cubes or powder) ¾ c Tomato Sauce 3 c Water Brown rice (to golden) add chopped onion, cumin, ground pepper, crushed garlic, and tomato sauce. Add water and chicken bouillon. Bring to a boil, turn down to low and cook for 30 minutes. Check, if the water is gone before the 30 minutes, remove from burner. Cumin, pepper, bouillon and garlic to taste. If you use bouillon cubes, I usually use 6 small or 3 large. |
