Low Carb Reuben Casserole
I happen to love Reuben sandwiches but since DH stroke, he's on a low carb diet. I found this super recipe on the CDkitchen website and it tastes just like the sandwich.
Ingredients: 1 lb. sliced deli-style corned beef (since there is just the two of us I only bought and used 1/2 lb. for this) 1 jar (16 ounce size) sauerkraut 5 ounces Swiss cheese 4 tablespoons sugar-free mayo 1 tablespoon dill or Splenda sweetened relish 1/2 tsp. Splenda sugar substitute bottle of Thousand Island dressing. Directions: In a large casserole dish spray the pan with cooking spray the layer thin slices of corned beef. Drain sauerkraut of half of it's juice and lay atop the corned beef Top with the Swiss cheese layer and bake 350 degrees for 15 min or until cheese is melty but not liquidy. In a separate bowl while dish is making mix Thousand Island dressing, mayo and relish. Remove casserole dish from oven, slice in serving size squares and top with dressing mixture. That's the official recipe but I just poured the bottled Thousand Island dressing over the top of the casserole with I put in in the oven then put each slice on a single slice of rye bread. It was delicious and did taste like the real thing. |

I make a Reuben casserole that's similar. But I dice up the rye bread and push it into the cheese and dressing, before I pop it into the oven. That way the bread is warm too. Then I cut the casserole and put it on individual plates for serving.
You can use more or less bread that way. |
