1 cup crunchy peanut butter, reduced fat (Publix or Jiff brands work well.)
1 egg
1 teaspoon vanilla
1/4 cup sugar

Mix together well. Drop in balls on cookie sheet sprayed with Pam. Flatten with fork tines.

Put a few Special Dark Chocolate Chips on each cookie. (Is easier to do now than try to mix in dough - they fall out when putting on pan.)

Bake 14 minutes at 325 degrees.

They freeze very well!
