Ever heard of these before? My friend told me about them tonite and I thought she was crazy and HAD to try them...less than 5 minutes from "grab the bowl, we're making cookies" to the oven...

Ready for this? Trust me, it really DOES work!!

1 cup of peanut butter
1 cup of granulated sugar
1 egg

Mix well and drop by teaspoons on an ungreased cookie sheet, bake 13 - 15 minutes at 325.

Have a glass of milk ready... :)

These are really good with raisins in them. It's almost like peanut butter and jelly.

No flour? This sounds unbelieveable but I'm about ready to go to the kitchen to try this...will let you know my results.

how does it work??

Charlee 02-15-2011 07:13 PM

Dunno how it works...but it works! I told my friend she was crazy when she told me to try it, but figured that I could always add the "rest of the ingredients" if this didn't work! LOL Didn't have to...melt in your mouth p'nut butter cookies!!

This sounds great but is there an easy way to measure peanut butter?

I use the water method. Start with a half cup of water then spoon in the peanut butter to level you need plus that half cup. Then pour off the water and the peanut butter won't stick to the cup very much. It works with shortening too.

I've been looking for gluten-free recipes...I guess this one fits the bill too.
