Make ahead vegetable casserole?
I am looking for a recipe for a make-ahead vegetable casserole to serve on Christmas. Any favourites out there?

Here's a holiday salad...2 cups each of chopped broccoli and cauliflower,1 c chopped red pepper,sliced black olives. Mix 1/4 c oil,1 1/2 tablespoons each of white vinegar and fresh lemon juice,1/2 tsp sugar....pour over veggies. It's festive and holds up under travel,no refrigeration etc.

Had this last year at Christmas dinner and everyone loved it. Re heats well, too.
Fabulous Broccoli Cauliflower Casserole 8 servings 1 (10.75 ounce) can condensed cream of mushroom soup ½ cup mayonnaise ½ cup sour cream (or use all mayo) squeeze of lemon juice 1 egg, beaten 1/4 cup finely chopped onion 3 (10 ounce) packages frozen chopped broccoli (or broccoli-cauliflower mix) 8 ounces shredded SHARP cheddar cheese salt and ground black pepper to taste 2 pinches paprika bread stuffing mix melted butter Preheat oven to 350 degrees; Butter a 9x13 inch baking dish. Mix condensed soup, mayonnaise, sour cream, lemon juice, egg and onion. Break up the frozen broccoli in a large bowl. Add soup mixture to broccoli, and mix well. Sprinkle on cheese, seasonings, and mix well. Spread mixture into prepared baking dish, and smooth top of casserole. MAKE AHEAD TO THIS POINT. Blend bread stuffing mix with melted butter and sprinkle on top of the casserole. Bake for 45 minutes to 1 hour in the preheated oven. Jan in VA |

Here is one of our family favorites:
5 cups frozen mixed vegetables ( corn, green beans, limas, peas, not broccoli and cauliflower kind) 1 cup chopped celery 1 medium onion, chopped 1 cup grated cheddar 1 cup mayonnaise (I use light mayo) 1/2 cup butter 34 Ritz crackers, crushed Cook onion, celery and vegetables until just tender and drain very well. Place into 9x13 greased casserole dish. Mix cheese and mayo and spread over vegetables. Combine crackers and butter and spread on top. Bake 30 minutes at 350. To make ahead cook vegetables up to 2 days before, mix cheese and mayo and put into a container, crackers and butter go into a zip lok bag ( I mix mine in the bag). I layer it just before I cook it. Enjoy! |
I forgot to tell you that the mixed vegetables are a 20 ounce bag. That's easier than measuring out 5 cups of frozen vegetables. I cook those in the microwave. My grands do the cracker butter mix and stir the mayo and cheese together.
I really do not like the green bean casserole with the fried onions on top, and I pretty much avoid recipes that start with mushroom soup. That started with not liking to eat grey food...I know, I'm wierd.... |
