Mango Snacks

Our son's mango tree is very prolific this year, needless to say we have an abundance of mango's, fresh sliced, mango cookies and dehydrated mango snacks. We really enjoy the snacks and the fruit with ice cream.
Mango Cookies
1/2 cup butter (softened)
1 cup granulated sugar
1/4 cup brown sugar
3 eggs
1 1/2 tsp vanilla
1 1/2 tsp cinnamon
3/4 cup mashed mango
1 tsp baking soda
3 cups flour
1/8 cup oatmeal
1/2 cup chopped nuts


Put eggs, baking soda, 2 cups of flour, sugar, butter and mangos in a large mixing bowl. Mix with mixer until creamy and altogether, then add the vanilla, the rest of the flour, cinnamon, brown sugar and nuts. Bake in a preheated 375 degree oven for about 9 - 11 minutes until they are golden brown.
Makes about 5 dozen

I am so jealous! When we lived in south Florida we had a huge old mango tree that was so prolific! Enjoy and thanks for the recipe.

I love dried mangos! These fresh off the tree mango look so good! Wish I had some in hot Kansas.

Can you send me some?? I buy some from the store, but can never peel them very well; and they get mushy.
