Mashed Potato Souffle With Cheese & Bacon
 

I know, I know...this recipe is soooooo not vegan and I can't honestly say that it's even the least bit healthy. (I'm thinking, "heart attack casserole.") However, my son has been coming to our house to stay 3-4 days a week to work on a construction project with my husband. He really doesn't like vegan food and he's super hungry when he gets home from work, so I"m gonna make it for him. It has lots of swiss cheese and crunchy bacon in it and we just harvested some russet potatoes, so it's perfect! I'm sure, like nachos at a ballgame, it will taste delicious.

Just copied and saved the recipe. I am a potato loving gal, so this would be a dangerous recipe for me to make for just myself.
