Here's mine: 2lbs burger, large hand full of oatmeal, 1 large egg (or two med), finely chopped onion, about 1/4 cup canned cream, 3 slices of bread (I use the end pieces mostly). I moist the bread with water & squeeze excess water out & crumble into meat. The reason I do this with the bread is to keep the grease from soaking into it. Then add Johny's season salt & a few squirts of ketchup & mix well. About a half hour before it is done baking, I add more ketchup to the top & finish baking. Have never had a complaint from anyone so far.

I also use Tartan's recipe, but with a slight twist. My 22 year old daughter is autistic and can't tolerate the texture of vegetables. So when I make meatloaf I drain a large can of mixed vegetables, put them in the blender to make a paste out of them, then add that to the meatloaf. That way I can sneak vegies into her on occasion. I've also been known to boil down some V-8 to make her spaghetti sauce with. Moms have got to be sneaky at times! 😄

Go to Paula Deen's website and find her recipes for meat loaf. I have made two of them and I will make nothing else in the future. I prefer the plainer one, not the cheeseburger with onion rings, though that was delicious too. I agree that ground beef is not the same as it used to be.

I also use Milk in mine, sometimes Almond Milk, I am not a huge fan of tomato sauce.

3 lb ground chuck
1 lb ground pork
2 carrots, grated
1 onion, chopped
2 eggs
1 c bread crumbs
1 c ketchup
2 Tbsp mustard
1/4 c barbeque sauce
1 tsp garlic powder
1/2 c chili sauce
salt & pepper

Mix all ingredients and place in two large loaf pans. Bake at 350 for 1 hour.

The meatloaf mixture (uncooked) freezes well so I would normally bake one loaf after mixing and freeze the other half for future use.

Ground Beefm sometimes I add a bit of ground sausage. I always add Worstershire Sauce, eggs, uncooked oatmeal, or bread crumbs. onion garlic are always a must as well as egg. The surprise ingredient? grated apple! Makes is moist as can be! Ketchup spread on top and then uncooked bacon on top of that and it will cook along with the loaf. Delicious!

I will try some of these ideas too. Meat is not as good as it used to be, we are all wanting lean meat and it is not as flavorful, or as tender in other cuts. Ah the good old days ...........
