1 finely chopped onion
1 cup of chunky salsa
1 1/2 cup of regualar rice (not instant)
2 cups of chicken broth
2 tablespoons of oil

saute the onion in the oil for about 5 minutes....add the dry rice and saute the rice..to make it a nutty brown color. watch it closely so it doesn't burn, about 5 minutes..stirring it occasionally.
Add the chicken broth and salsa, cover and cook on medium until the liquid is absorbed.

I make this with tacos or enchiladas..you can add more salsa if you wish.

Same way I make it but you just gotta add chopped bell pepper and cumin!!! You gotta throw in some cumin!!! :lol: Is it ready yet??? :thumbup:

Saw this on the board yesterday and we were going to friends for Mexican dinner. I called and told her if it was good, I would bring it, if not I would tell her about it. Was soooo good, I did add more Salsa just before we ate! Thanks!
