These cookies are very traditional in Texas during the holidays. We accompany them with a hot cup of chocolate. Buen Provecho !!!
Ingredients: 1 cinnamon stick 1 cup of finely chopped pecan pieces 1 tsp. of finely ground anise for taste***optional*** 5 c. of flour 2 c. of sugar 3 tsp. baking powder 1/2 tsp. baking soda pinch of salt 2 eggs beaten 1 tsp. vanilla 2 cups shortening/ softened cinnamon and sugar for dipping of cookies In skillet roast cinn. stick. Mix cinn. stick, pecans, flour, sugar , baking powder and soda, and salt. Once those ingredients are mixed add eggs, vanilla to flour mix and the shortening. Work in shortening by using hands to mix and make the dough. Shape dough into grape size balls, smash and and smash w/ a fork. Bake at 350 degrees for 12 to 15 minutes. Dip cookies in sugar and cinn. mix while they are still warm. Place on a cooling rack lined w/ parchment paper. You may store in a tight closed container for 3 to 5 days.
