Microwave French toast.
 
This recipe was in the Reader's Digest and we tried it this morning and it was really good. Fast and easy is my middle name, wait that doesn't sound right. Enjoy!

Rub a pat of butter on the bottom of a mug; fill it to the top with chopped bread (I used cinnamon/raisin bread).

In a separate mug mix one egg, three tablespoons of milk, and a sprinkle of cinnamon. Pour the mixture into the mug and microwave for one minute.

Super quick for days when you want to get back to your quilting and not be left with dishes and pans to wash.

I will try this for my grandsons who love French Toast but I don't always have the time to clean up the mess it makes before taking them to preschool. I have them three days a week and I need some fast and easy ways to make a good breakfast that doesn't come from a package or freezer. I make homemade cinnamon bread so this will be perfect for the leftovers pieces.

Breakfast in a tortilla is a way to go....scrambled eggs, crumbled sausage or bacon (can be cooked beforehand), shredded cheese, fried or hashbrowned potatoes, even leftover pot roast or chicken.
Or make it a fruit-filled one topped with some whipped cream or sweetened sour cream (with brown sugar).

My niece suggested adding a touch of vanilla to this and it suddenly becomes instant bread pudding.

Now you have two mugs to wash. I would find a way to wash only one! ! !

Put the egg, milk and such into the buttered mug, beat it up and fill the cup with the bread pieces. Let it sit for a while and the bread will absorb the egg mixture. Stir a little and then cook it. I'm always trying to find ways to make fewer dirty dishes.
