Just made some and put it on facebook for my aunt so figured I'd share here in between eating it....
-cook 2 cloves of garlic in warmed oil...(i love garlic and use 3)
add 1 35 oz can of whole peeled tomatoes. smush the tomatoes against the side of the pot. Add 2 cups of chicken broth. I use a 2 cup/14.5 oz can of roasted garlic chicken broth. Also add 2 cups of tomato juice. Simmer uncovered 30 minutes. Add at least 14 fresh basil leaves and puree with an immersion blender. Add 1 cup of heavy cream and season to taste. I added cracked black pepper, a little mrs dash and my beloved Penzeys Pizza seasoning. put a little mozzarella cheese and croutons on top and MMMMMmmmmmmmmmm!! It makes about 4-5 bowls of soup. Enjoy!!

a yummy picture to help....

i just ran to the grocery store. Got a basil plant and picked it almost clean. How close is your local store?? It only takes 45 minutes to cook before you get to enjoy!!!

Meh. We had tacos. I had everything for that, including ripe avocado and tomatoes and stuff. :P

How do you keep your basil alive? I tried about 4x last year and the darn thing kept croaking on the kitchen counter.

ummm about that....we live in a basement apartment on LI so I have one tiny window that has an ac unit in it. Soooo I buy fresh basil from the store. Most of the plant went into the soup, the rest will be put into meatballs so then there is no plant left. It was the same price as the picked leaves in a package but the plant was fresher. SO I have NO IDEA how to keep it alive. :) lol
