Just made some and put it on facebook for my aunt so figured I'd share here in between eating it....
-cook 2 cloves of garlic in warmed oil...(i love garlic and use 3) add 1 35 oz can of whole peeled tomatoes. smush the tomatoes against the side of the pot. Add 2 cups of chicken broth. I use a 2 cup/14.5 oz can of roasted garlic chicken broth. Also add 2 cups of tomato juice. Simmer uncovered 30 minutes. Add at least 14 fresh basil leaves and puree with an immersion blender. Add 1 cup of heavy cream and season to taste. I added cracked black pepper, a little mrs dash and my beloved Penzeys Pizza seasoning. put a little mozzarella cheese and croutons on top and MMMMMmmmmmmmmmm!! It makes about 4-5 bowls of soup. Enjoy!! a yummy picture to help.... |
