The Mushrooms are Coming! Need Recipes Please
 
The rains have started here, in N. California and that means one thing...wild mushrooms! We're fortunate to have a few patches of Chanterelles and Boletes around our area. It's usually a long hike in the rain to get to them, but ohhhh...they're so good. They'll be here soon. I need some mushroom recipes please!

I've grown and cultivated a lot of food in my day, but never mushrooms. I'll bet they are tasty. Good luck hunting. Recipes? Heat and Eat is all I do, sorry I'm not fancy....but I'll be watching.

I have been on a mushroom kick lately and I have just been "stuffing" mine with sauteed onions & garlic mixed with parmeson cheese & Italian breadcrumbs then baking. Yummy!

I just ran across a mushroom recipe over creamy polenta and then topped with baby mixed greens tossed in lemon and olive oil. It’s on my lunch menu this week. I had to buy a packaged mushroom mix. : /

Google the Internet to get recipes for mushroom pie, mushroom butter and mushroom soup....all are heavenly!

Mushroom Barley Soup

2 tablespoons Olive Oil
2 Onions, chopped
4 cloves Garlic, minced
1 pound fresh Mushrooms, sliced
½ cup Soy Sauce
½ teaspoon salt
1 cup Barley
1 teaspoon Garlic Powder
1 teaspoon dried Dill Weed
¼ cup fresh Parsley, chopped
10 cups Water
2 Carrots, sliced
2 stalks Celery, sliced

In a large pot, combine olive oil, onions, garlic and mushrooms. Saute for about four minutes. Add the soy sauce, salt, barley, garlic powder, dill weed, parsley and water. Bring to a boil and simmer for 2 hours. Add carrots and celery. Cook an additional 45 minutes.

A restaurant in my area does cream of potato/mushroom soup. I don't have a recipe but there may be one on Google.

Not my recipe but it's old & favorite around reunions...not sure if your mushrooms works on this BUT....
1/2 stick butter
1 cup uncooked Rice
1 small can mushrooms
1 can of French Onion Soup
1 can Beef Consumme Soup

Mix tog in casserole dish & bake at 325 degree for 30-40 min or til done
I usually cut up the butter & spread it thru out

We love this recipe. http://www.geniuskitchen.com/recipe/...m-sauce-326496 . It calls for dried Morel mushrooms. We make it out of fresh Morel's Yum.I just soak my fresh mushrooms in the wine and dump it in. I have made it with other mushrooms. Not the kinds you have listed. It is amazing over steak or chicken.

If you have an abundance all at once, have you considered dehydrating them to use later? I grow shiitake mushrooms on oak logs, and when they Fruit, I have way too many to use fresh. I bought a dehydrator and it only takes about 24 hours. Then you can store them and enjoy them all year long. Just put them in hot water and they rehydrate in no time, and when cooked they are nearly as good as fresh!
