My Homemade Marshmallows!! Sooooo easy!

Here's my recipe! This is from the 50's and can be decorated with sprinkles of all kinds. Mine turned out nice and thick as I made them in a 8x8 pan instead of 9x13 like the original recipe called for. Enjoy!
Ingredients: 2 envelopes unflavored gelatin 2 cups white sugar 1-1/4 cups water, divided Directions: In a large mixing bowl, stir together gelatin and 1/2 cup plus 2 tablespoons water. Set aside to soften. Combine remaining 1/2 cup plus 2 tablespoons of water and sugar in a saucepan. Bring to a boil, stirring occasionally to dissolve the sugar. Do not stir once the sugar syrup begins to boil. Heat to 270 degrees F (130 degrees C) (or about 6 min.). With an electric mixer running on low speed, carefully pour hot sugar syrup into gelatin mixture. Beat on high speed until mixture is light and fluffy and mixture is no longer warm to the touch, 10 to 15 minutes. (I did this for exactly 11 min.) Pour into a lightly greased 8x8 inch baking dish and let set 8 hours or overnight. Cut into squares and serve. |
Do you leave it sit on the counter top over night or in he refrigerator?

p.s. I did spray the knife with Pam so the cutting was easier or a hot knife would give the same results! |

These are wonderful by the way and so much BETTER than store-bought! Freezing them is an excellent way to have them for hot cocoa in the fall and winter and much to my amazement, they needed NO thawing, haha! Store-bought marshmallows need to that for at least 1 min. as I've timed them before. You can tell I've always wanted to make my own marshmallows and finally got around to it!! Another thing about making marshmallows is that it will not 'explode' on you like some suggested when combining the syrup with the gelatin as in a science experiment. It just didn't happen. |

These are wonderful. I give them in a jar or other cute container at Christmas with some nice hot chocolate packets. Folks rave about them. :-)

This sounds like a really nice gift item for Christmas. Can you add vanilla when mixture is still warm? I think a few of the local knit group made these and dipped them in chocolate. Their comments were positive about how good they were.

Yummy, I made these a few times and dipped them in melting chocolate. So good.

I should have asked earlier, but I wasn't thinking. After cutting them do you dust them with powder sugar to keep them from sticking together??? :eek:

Thanks for letting me know, I just thought that might help them not to stick together. I wouldn't want them any sweeter. :D I think I will try this for Halloween night, we always have neighbors come here to help give out candy. We sit outside with a fire pit & drink hot chocolate. A wonderful time fime for the children & the grown ups. :thumbup:

I wonder if you could double this recipe.. of course you'd have to have a bigger bowl... but it seems like it would be worth it.. especially when making them for a gift... has anyone tried that???

I just discovered homemade marshmallows last year.
I made them for a Holiday brunch and everyone raved. I made them with peppermint extract and added a little red food dye after I put in the pan and swirled it with a knife. So glad to learn I can freeze these. I will definitely make some for the holidays. |
