I am looking for a recipe for something called baked oatmeal, can't recall where I saw the recipe and never got around to making it. I recall it had oats (of course) and applesauce, but can't remember anything else about it.

The Amish in PA. serve this and it is so good but when I come back home I never think to make it.

Hi: My recipe is very similar, except I use no sugar or oil.4 c oats,2T Bk Pd,2 tsp cinn,1/2 c dried fruit,1/4 cup walnuts, 2 eggs,2 c applesauce, 2 c milk. 9 x 13 pan 350 degrees 70-75 min. Have pulverized fresh pears,banana etc. Very good and keeps a long time in fridge. Quilter 2

My husband and I enjoy this for a meal once in awhile.
Baked Oatmeal
2 cups uncooked quick-cooking oats
¼-1/2 cup packed brown sugar
1/3 cup raisins
1 Tbsp chopped nuts
1 tsp baking powder
1 ½ cup fat free milk
½ cup applesauce
½ tsp cinnamon
1 large egg beaten
1 apple, peeled, cored, and grated (optional)
Combine the first 5 ingredients in a medium bowl. Combine the milk, applesauce and egg. Add milk to oat mixture, stir well. Add apple if desired. Pour oat mixture in to 8”x8” baking dish sprayed with cooking oil. Bake 375 degrees for 25 minutes. Serve warm with milk or ice cream . Yield: 5 servings @ 2/3 cup each.

My recipe is very similar to yours - For company I bake it in a spring form pan and slice it like pie and serve in bowls to pour milk over. My favorite is to bake it in large size muffin tins and freeze individual muffins.

Thanks for this. I have hesitated making this because of the size of the pans, only two of us here would be eating it the day it is made, my husband works night shift so the morning it is just my son and I.
