Update: I ended up making a Hummingbird cake. I was inspired to make it by all of your suggestions. It seemed to fit the bill perfectly. It has bananas, fresh, chopped pineapple and pecans in it, with a cream cheese frosting. I found it in a Cake magazine that I had. It's one of those periodicals that comes out only once, or twice a year. His birthday is today. I'll le you know how the cake tastes. It looks awesome!
