Need a new Easter dessert, ideas please
 
For so many years I have made carrot cake in a bunny shape, coconut "fur", jelly bean eyes etc. for Easter Sunday dinner dessert. The grandkids love it, but need a new idea for the adults. What do you serve? Thanks:)

Cheesecake?? I love cheesecake. The cheesecake recipe I use is from food network. If you're interested in cheese pie, I have a recipe for that as well. Lots of ricotta cheese so a bit different texture from cheesecake. Neither are quick desserts though.

Pineapple upside down cake with fresh whipping cream or lemon squares are always nice for spring. How about a banana split cake?

I have made strawberry shortcake for our Easter dinner for years. Easter seemed to be the time of year when we could get nice strawberries again. Now we can get berries pretty much all year.

I have a lemon dessert that has a real fresh taste. Has a crunchy bottom, lemon jello/cream cheese mixture topped with cool whip. Yumm

I make fresh strawberry pie topped with whipped cream. A light cake good for spring/summer is pig pickin' cake...just google for lots of recipes.

Angel food cake with crushed pineapple and whipping cream on the side. I use an angel food cake mix.

Grasshopper Pie for me!
....the one with whipped evaporated milk mixed with green jello
in a chocolate cookie crumb crust (pie or oblong pan)
Of course, any colour jello could be used.

Light, fresh, and delectable!

Stuffed Angel Food is Springy, easy and good!

Just cut an angel food cake about half way down, going across You will have 2 large pieces.
Stuff the bottom piece lightly with a mixture of fruit and Cool Whip or Whipped Cream. Drained Pineappl, Fruit Cocktail, Strawberries; your choice Fold in Cool Whip/Wh. Cream.
Spoon loosely into cake bottom. Lay top on the cake, and cover with C.Whip, W. Cream, and smooth evenly over top.
Handle gently; may need a few toothpicks here and there.Serves 10 or so.
Enjoy!

I make a Butterfinger punch bowl cake or a Strawberry with glaze punch bowl cake.

Trifle is another easy dessert and looks so pretty in a glass bowl.

I will be making this delicious and moist lemon pudding cake for the Easter lunch at Church this year. I have always had compliments and this is one of my favorite cakes and so simple and does not take long to prepare. You will need the following: 1 Duncan Hines Lemon Cake Mix,1 box instant lemon pudding, 1 can of Eagle Brand milk 1 large container of Cool Whip.9x15 cake pan works best - I have a glass pan this size that I use.
Directions: Bake cake mix as directed on the box. Allow cake to cool it the pan for 5 minutes, (do not remove cake from pan) then poke lots of holes all over the top of the cake-a shishkabob skewer works best for me. Pour one full can of Eagle Brand milk all over the top allowing it to drizzle into the holes. Allow cake to cool completely, then mix pudding according to directions on box and spread all over the top of the cake, then spread the entire container of Cool Whip over the top of the pudding- you are done!
I think it tastes better when it is cold at least this is my preference. But you will need to keep it refrigerated until you are ready to serve it and any left over cake because of the cool whip. I'm sure you will get lots of compliments on this cake - I always do.

Mom's Cheesecake

I've attached my Mom's Cheesecake recipe. It used to be in ads for Kraft Philadelphia Cream Cheese, Carnation Milk or Jello.
To interpret... it calls for a small box of Lemon Jello but Mom always used a large one - a package of cream cheese and a large can of Carnation milk - mom used the 2% but I use skim - and then a can of cherry pie filling. Doesn't take long to put together but it must be refrigerated at least four hours - overnight is better.
Makes a lovely light dessert.
