Need Pork Belly Recipes
 
My sweet neighbor surprised us today with a package of pork belly. I have heard it is just delicious but don't have a clue how to use it. Help please!

We do a lot of pork belly around here since the hubby went keto.

The easiest way is to cut it in cubes, roughly 1" or so. Sprinkle liberally with flavorings you like, hubby loves the Montreal pepper mix.
Preheat oven to 400.
Cook 30 minutes, drain fat, turn over pieces, cook for 15 more.

Pork will be sizzling hot and delicious!

Many people braise (slow cook in liquid) their pork belly however, my hubby doesn't care for the texture.

I will put it in the smoker and let it smoke for about 10-12 hours, nice and slow. Wonderful flavor. I use hickory wood chips in the smoker. Yummy

But don't discard the fat. It can be used anywhere you might need some fat. I have even used such fat in chocolate cake. I "wash" it first if it has a lot of seasoning in it. Put in a kettle with a cup or more of water. Heat to boiling. Put it into the refrigerator until the fat has hardened. Poke a hole in the fat and drain the water. I sometimes do this twice. You will probably never get rid of all the spice taste, but that's why I use in Chocolate cake. The chocolate covers whatever taste is left in it.

Our family always stuffed it with sausage and potatoes and baked it in the oven.
