We are new to RV'ing and have discovered "POT LUCK" dinners @ most parks where we stay. Anybody have GOOD pot luck recipes that include healthy food ????? Keep in mind that we are not always near a grocery store so need something we can have "ON HAND"? put on your thinking caps, pleze!!!

Taco soup if you can brown hamberger meat or brown it at home and bring it. It's just bunches of canned things served with chips, cheese, sour cream and more onions.

Surprisingly...sauerkraut & wienies/smoked sausage (cook it outside so your RV doesn't stink all night). Most people love this because it is homey. Just dump the cans in and use little smokies -- heat for a couple hours and then dig in

We have been campers since the mid '70's... can't wait to get on the road again this summer! One of the things we always take with us is a bag of potatoes. And one of our favorite dishes is a potato soup that is like a chowder with green beans, chunks of ham, mushroom soup and milk. It's nice and thick and creamy and sticks to the ribs. Cook on top of the stove or in a crock pot. And we like scalloped potatoes in a crockpot, topped with cheese before serving.

Just plop country style pork ribs in the slow cooker, add a couple cans of sauerkraut, put about 12 drops of liquid splenda on top of sauerkraut, and cook all day. Tender and sweet and sour. Just great.

Here is one that my co-workers loved and always requested that I bring when we had a pot luck at work. It is easy to fix, easy to carry and is served chilled.
1 large can of chicken - in cans like tuna fish 4 cups of cooked pasta - any kind 1/4 cup of ranch dressing - lite works well 1/4 cup grated parmesan cheese 1/4 cup sliced olives - any kind Cook pasta per directions on package, drain well, mix other ingredients and place in fridge to chill. Feel free to adjust ingredients to taste. Depending on the type of pasta I use, I sometimes add a little more ranch dressing to prevent it from being too dry. I also add more olives and parmesan when I fix this at home because I love both of these ingredients. This recpe also works well with tuna fish packed in water. |
Make lasagna just like you would in a regular pan, Layer in crockpot. Put on low-- sprinkle cheese on top after heated thru.

Chili! Freeze in freezer bags ahead of time, and place in refrigerator or cooler when leaving for camping. Will thaw slowly, but you can even put it in a large coffee can and place on a grill or fire if you don't have a stove in a camper or a camp pot.

If you have a freezer why not make BBQ ahead and freeze it. Does it have to be a main dish? if not, deviled eggs are good and don't require many ingredients.

Hot and Hearty Hominy
2 cans of yellow or white Hominy (drained and pour into 9x9 Pam sprayed casserole dish In seperate mixing bowl add the following 1 can cream of chicken or mushroom 1 jar cheez whiz 2 tablespoons of minced onions 2 tablespoons of Chili powder salt and pepper to taste (to suit your taste) onion powder and garlic powder (to suit your taste) Put in microwave till melted and stir together, then pour over the Hominy. Top with crushed Fritos, and put in microwave for approximately 5 to 8 minutes, till heated through and cheese mix has covered all the hominy. Goes over very well at our Potlucks! |

BBQ Pulled pork:
put shoulder in crock with onions and either apple juice or apple cider vinegar (use less than apple juice) cook till shreddable and favorite BBq sauce (sweet baby rays) and enjoy! Italian Beef: Cheap cut roast, like chuck (3-4 lbs) in crock add one jar of italian dressing (I use robusto) a small can franco american beef gravy (it is campbells now) low for 4-6 hours til meat is shredable. Shred meat return to crock - add a beer (not dark) and pepperchinis, sliced some of the liquid if you want (you can always add more - don't go overboard) - I use the mild and cook for 1 more hour. Eat! Beef Stroganoff 2 pounds cubed stew meat 2 cans Condensed Golden Mushroom Soup (used regular) 1 largish onion diced 2-3-4 tabls of Worcestershire depending on your taste) 1/2 water (I use beef broth if I have it) 8 oz of cream cheese - softened couple of dashes of Garlic Salt couple dashes of Hot Paprika In the slow cooker stir in all the ingredients, except the meat AND the Cream Cheese, together. Once combined add the meat and mix together. Cook on Low for 8 hours. Cut up the cream cheese into cubes just before serving and turn crockpot on high. Stir the cream cheese in until all combined. You might have to put the lid back on and leave for 10 minutes. Serve over egg noodles. When adding the cream cheese, I found if I microwaved it and tempered it with the broth from ther crock pot, it mixed better and was not lumpy. This is one of the best stoganoffs, I am always giving out the recipe. |
Walking Tacos
Make taco meat however you like, keep warm in crock. Cut tomatoes, onion, lettuce and black olives (or whatever you like on tacos) salsa, cheese, put in to gladware to bring with. Purchase lunch size bags of doritos. plain or cheese. Have guest crush doritos in the bag and open sideways, then fill with taco meat and extras, eat with a spoon - no plates! |
This one sounds strange but it is really good.
2 packs of small smoke sausage links or meatballs 1 can cream of chicken soup 1 jar of spicy honey B-B-Q sauce. Stir and heat in the crock-pot. You can add any medium or hot peppers to taste or leave as is for mild B-B-Q. Serve with crusty bread or hard rolls. |
We do it in a VW camper so our fridge is 1.2 cu ft! It's really a challenge. Devilled eggs is great-look for cheap plastic egg shaped trays we got 3 for $1 each.
I like to do dessert. I just did Banana pudding. Instant vanilla pudding, bananas and vanilla wafers plus redi-whip. I will also buy cookies if we don't go out till Thur or Fri. Or bake a cake at home, but you could do it in the RV. Biscuits, homemade bread of any kind, esp. sweet stuff like banana bread, etc. Our big rig friends always traveled with a bread machine as bread was/is very expensive. Crock pot chili, beef Stew, veggie soup, corn chowder. You can use evaporated milk if cooling is a problem. Crackers and cheese, snack things like chips & dip, pretzels are salty but low fat, we have done antipasto with pepperoni, cheese, crackers, olives, smoked oysters or other canned fish, pepperoncini. Has to be good friends for this now, it's gotten expensive. :thumbup: Happy camping. Where do you go? We're mostly up and down the Eastern Seaboard. |
We were RV'rs for years & did whole lot of pot lucks. Two dishes that men love are a big pan of home made mac & cheese & a chicken noodle pot that is just simmered chicken picked off the bone,with Reams frozen noodles added to the broth with the chicken. I usually add 1-2 cans of ch broth for flavor & to keep from being too thick.
Never had leftovers with either dish. An easy dessert is to line a 9x13 dish with pie crust......mix 2 cans of pie filling with a dash of whatever flavoring goes with the filling.....almond for peach or cherry,vanilla & cinnamon for apple, spread on pie crust, dot with 1-2 Tbl butter,then cut up another crust into squares & put on top of filling.Bake at 400* till bottom crust is done & top is light golden brown.....about 35 mins. |

1# elbow macaronie cooked Brown in skillet 1# hamburg 1 med onion in 2 tbs olive oil 1 bell pepper Add 1Lg can stewed tomatoes cooked elbows. salt and pepper to taste Mix and serve. |
This is a Southern Living recipe that has our church potluckers begging for more. At first I didn't like it but with each bite it got more interesting and now one bowl doesn't cut it.
Wild rice chicken or tuna salad. 1 box of Uncle Ben's wild rice. cook as directed and then cooled. opt. 1 large can of Albacore Tuna or chickend breast, drained. Opt. sour cream or mayo. I use lite sour cream instead of mayo or you could add both. Sour cream makes it lighter and is very good. I'm not sure of the amount to add you want it to be the consistency for a chicken salad or tuna salad spread. Mix all the ingredients and serve with a nice firm whole grain bread. It's quiet hardy and tasty! |

1 pork roast 1 bottle barbeque sauce Put in crock pot, turn on low for 8 hours, serve on buns with salads. Can be made in dutch oven on camp fire too. |
