I have a recipe for Oatmeal Bars. Do you think that is close to what you want? The person who entered it in a family cookbook is a wonderful cook. I can't help but think they would be delicious.
Wanted to check before sending it, in case you had already had that recipe. Mariah |

The egg will give you a softer texture, tending towards cake-like. I do this all the time with several different cookie recipes. The hardness could also be caused by a hotter oven and/or too long of a bake. It's easy to over bake cookies, thinking they aren't quite baked, and yet they really are ready to remove from the oven. Then let sit on the cookie sheet for a while before transferring to a wire rack. |
The recipe on the Quakers Oatmeal box is excellent. The trick to a softer cookie is to take them out of the oven sooner. The centers should look like they aren't cooked. They continue cooking on the sheet out of the oven and should be just right. Good luck.

Do your cookies use white sugar? If so, try substituting 1/2 brown sugar for 1/2 the white and see if they come out softer.

I googled the old original Quakers Oatmeal Raisin cookies. There is a little bit of difference from the one on the box now. Offhand I can't say exactly what but it is bound to be a little less "healthy" for us. They sure are good.

I like to add coconut to chocolate chip cookies as well as the oatmeal cookies. I have the orginal recipe from oatmeal box. I also use the cooks in one minute oatmeal. Not the old fashion oats.

I love my silicon liner. I think it makes the bottom of the cookie a little crispy and keeps the top soft.

Love oatmeal cookies the best. Found a recipe called Oatmeal Scotchies using butterscotch chips. Recipe is on the back of the bag. I also love raisins but they don't always like me so have to stay away from them most times.
Will try adding an extra egg to see if they come out a bit softer. |
