I need to take a salad to a potluck Christmas dinner. Anyone have a good recipe other than for brocoli salad - someone else is bringing one of those? Many thanks!

I take mixed greens, slice up strawberries, Walnuts, and grapes and use the Raspberry walnut dressing. Wonderful salad.

One of my favorites is green pea salad.

Thaw 1 bag of frozen peas
Dice one medium onion
Cut up 8 oz. of cheddar cheese (cubes about size of peas)
dice 2 or 3 hard boiled eggs

Lightly toss all together

Add enough mayonnaise to make it creamy
Toss again
Chill for about 2 hours Then serve

This is like eating the yummy top layer of 7 layer salad!

I have some really nice salads that I make but I don't really have exact quantities...let me tell you how I make it..I will try to put down quantities...but more or less won't ruin it...

3 Bean Salad

2 cups cooked green beans, 1 inch pieces
2 cans of other beans, like kidney, mixed, black
1/2 red pepper, ciced
1/2 purple onion, diced
Olive Oil and Balsamic....or Italian Dressing...or a combo of both...to taste...salt, pepper, oregano if you like

Delicious Pasta Salad

cook 1/2 package of tri colour fusilli or rotini pasta, cool
Add:
1/2 cup diced red pepper
1/2 cup onion, diced
1 small package of artichoke, drained
1/2 pitted black olives, drained
1/4 cup sun dried tomatoes in oil, cut into small pieces
a piece of feta. crumbled
Add Caesar Salad Dressing to taste...

You can omit anything you don't like...this is really good

Ramen Noodle Salad

Ingredients

2 boneless chicken breast halves, cooked and diced(sauteed in oriental oil adds flavor)
2 ounces almonds
2 green onions, chopped
1 tablespoon white sugar
2 tablespoons sesame seeds
1 (3 ounce) package ramen noodles, crushed
1/2 medium head cabbage, shredded
1/2 cup vegetable oil
salt and pepper to taste
3 tablespoons distilled white vinegar
Directions

Combine chicken, nuts, onion, sugar, sesame seeds, noodles and their flavor packet and cabbage in large bowl. In small bowl combine oil, salt, pepper and vinegar. Pour oil mixture over noodle mixture. Let stand overnight in refrigerator and serve.
Can use cole slaw mix in place of cabbage.Shredded red cabbage or diced red pepper adds color.

I like this....or a nice cole slaw...

Do you use a certain brand of dressing. I would rather try one that someone else likes, if I choose one on my own it would be the dud choice !!!

Cranberry Orange Salad with raspberry dressing

1 head iceburg lettuce chopped
1 small can manderine oranges drained save liquid for dressing
1/2 c chopped bell pepper
1/4 c chopped onions (optional)
1/2 c dried cranberries
1/2 c shredded cheddar cheese
1/2 c croutons

Put all of the above in a large bowl

Creamy Raspberry Dressing
1/2 c sour cream
1/2 c mayo
1/4 c raspberry jam or preserves
3 tbsp apple cider vinegr
liquid from oranges
2 tbsp sugar
1/2 tsp salt
1/4 tsp pepper

Put in a bowl and whisk until smooth pour over salad.

Frozen cranberry salad
1 lb sack of cranberrys ....chopped fine
1 can of crushed pineapple.....drain as dry as you can
1 large cool whip
1 cup of chopped walnuts
1 sack of little marshmallows
mix together and put in 9 x 13 cake pan then pop it in your freezer
let thaw a little before serving.......have used whole berry cranberry sauce instead of fresh berries not quite the same but not bad

This one is festive, is served at a dinner theater I've been to and is VERY good! I says serves 8, but at a buffet, it'll serve a lot more.

Grape Salad (serves 8)

Ingredients
4 pounds seedless green grapes
1 (8 ounce) package cream cheese
1 (8 ounce) container sour cream
1/2 cup white sugar
1 teaspoon vanilla extract
4 ounces chopped pecans
2 tablespoons brown sugar
Directions
Wash and dry grapes. In a large bowl, mix together the cream cheese, sour cream, sugar and vanilla. Add grapes and mix until evenly incorporated. Sprinkle with brown sugar and pecans, mix again and refrigerate until serving



This recipe is actually better the 2nd day…

I think it Newmans Own, but there are other brands too.

I have a very similar recipe that I put into individual cupcake papers (regular or mini) in a muffin tin to freeze. Instant portion control! You can also just remove a couple to serve and save the rest for another time. They can be stored in any airtight container, if you don't eat them all at once.

I recently attended a lunch for our swim club & had a salad with Rasberry dressing that was wonderful.The hostess showed me what she'd used.It was Kraft Light Rasberry dressing.I'd tasted rasberry dressing before that made me want to rinse my mouth :x This was so good, I bought 2 bottles :thumbup: from a regular grocery.Great stuff!

Five Cup Salad
1 can mandarin oranges, drained
1 can chunk pineapple, drained
1 cup flaked coconut
1 small tub of sour cream
1 cup minature marsmallows
Best if left overnight so the flavors can blend.

Mixed greens, topped with raspberries, 8 oz diced white cheese (Monterey Jack, I think; I just know it when I see it) and toasted walnut halves. Serve with a quality raspberry vinagarette that you put in a bowl and serve with a spoon; nobody will ask, but will assume it's homemade!

this is a unique salad that I got and have been making for about 25 years.
Salad Louisa
Ingredients:
6 hard boiled eggs, sliced
1 # bacon, cooked crisp and crumbled
1 pkg. mixed green lettuce
1 can of sliced water chestnuts, drained
1 can of bean sprouts, drained
1 can of mandarin oranges (optional)
Mix all together and add large can of Chinese Noodles and mix just before adding dressing.

Dressing:
1 large onion chunked or sliced up
1/2 cup oil
1/4 cup vinegar
1/2 cup sugar
Put in blender and liquify.
Pour over salad right before serving.

Not a good salad left over because the noodles get soggy but it has such a good flavor (even if you don't like onions) that we eat it the next day too. I make the salad dressing often and keep in fridge for other lettuce salads.

CORN SALAD:
2(15-oz.) cans whole kernel corn (one white/one yellow makes it pretty.
1/2 cup red onions, diced
1/2 cup green/red bell pepper, diced
1 cup mayonnaise (I use light Miracle Whip)
1 cup shredded cheese
1/2 bag chili cheese Fritos
Mix first five ingredients in large bowl. Jut before serving add the chili cheese Fritos. Serve

Yes, go to Cook's.com and check for an Asian salad.There have many goods ones. Usually with Napa cabbage which is awesome in a salad if you cut it thin. Usually has some nuts in it, some cut up fruit. It's DEEElicious. barb

Frog Eye Salad (this is a family favorite)
-people are very surprised to find there is pasta in this salad

1 cup tiny tubular noodles - cooked

1 -20 oz. Crushed Pineapple -(drain well)
1 -20 oz. Pineapple Chunks - (drain and preserve juice)

2 -small Mandarin Oranges, (drain and preserve juice)
10 oz. Cool Whip

Cook pineapple & mandarin juice, 2 eggs, 3 TBL flour, 1 cup sugar, and ½ tsp salt until thick.
Cool completely – Add Cool Whip and noodles.

Refrigerate overnight.
Add well drained fruit the next day.

It is just DH and me...so if I fixed all of these, well we would need the JAWS OF LIFE to get us out of the house......hehehehe
I guess I can start now and make one every month and then be back here by next yr. with more NEW recipes...... hehehehehe

Found this on a blog last month but I don`t remember which one!
Fruity Chicken Salad
5 c. cooked chicken, diced
2 tbsp. salad oil
2 tbsp. orange juice
2 tbsp. vinegar
1 tsp. salt
1 1/2 c. celery
1 1/2 c. green grapes (sliced)
1 (11 oz.) can mandarin oranges (drained)
1 (13 oz.) can pineapple tidbits (drained)
1 c. slivered almonds, toasted
3 c. cooked rice
1 1/2 c. mayonnaise (Don't put all of it in at once -- you probably only need 1 cup)
Mix first 5 ingredients and let stand 4 to 5 hours or overnight. Add remaining ingredients and chill for a couple of hours.

The first time I made it I used a rotisserie chicken and it was good! I made it again after Thanksgiving and used leftover turkey and it was awesome!

I can vouch that this salad is very good. My DIL makes it when we have get together meals.

Half a cup each of diced red and green bell peppers. half a cup of diced sweet onion half a cup of mayo or Miracle Whip two cansdrained) sweet corn and a medium sized bag of crushed Chili Cheese flavored Fritos. Mix all ingredients except crushed chips and chill. Add crushed chips just prior to serving. I have been asked for this recipe more often than any other I have taken to Pot Lucks

This is a great one we use a lot in the summertime because it can sit out for long periods of time. My family is not a fan of bell peppers, so I substitute grape tomatoes and neighbors always rave about the taste and beautiful colors. If you are new to couscous, don't be afraid, it's just semolina pasta in fine little specs. Sometimes you can get multi colored couscous for more colorful presentation!

Black Bean and Couscous Salad

1 cup uncooked couscous
1 1/4 cups chicken broth
3 tablespoons extra virgin olive oil
2 tablespoons fresh lime juice
1 teaspoon red wine vinegar
1/2 teaspoon ground cumin
8 green onions, chopped
1 red bell pepper, seeded and chopped
1/4 cup chopped fresh cilantro
1 cup frozen corn kernels, thawed
2 (15 ounce) cans black beans, drained
salt and pepper

Directions:
1 Bring chicken broth to a boil in a 2-quart or larger sauce pan and stir in the couscous. 2 Cover the pot and remove from heat. 3 Let stand for 5 minutes. 4 In a large bowl, whisk together the olive oil, lime juice, vinegar and cumin. 5 Add green onions, red pepper, cilantro, corn and beans, and toss to coat. 6 Fluff the couscous well, breaking up any chunks. 7 Add to the bowl with the vegetables and mix well. 8 Season with salt and pepper to taste and serve at once or refrigerate until ready to serve.

My most favorite salad dressing is "Brianna's Strawberry Vinegarette". Very versatile without being too acidic.

Favorite salad is chopped romaine, with sliced apples, dried cranberries and pieces of smoked gouda cheese, topped with spicy pecan pieces. Have used strawberries and mandarin oranges sometimes too.

Marinated Coleslaw

1 large head of cabbage shredded - I use bag mix (14-16 oz)
1 medium green pepper, chopped
1 medium onion, chopped

Put above ingredients in large bowl and pour ½ cup of Splenda evenly over the above mixture.

Boil together:

¾ cup salad oil 1 ½ tsp salt
3/4 cup vinegar 1 tsp celery seed
1 tsp dry mustard Black pepper to taste

Pour while hot over cabbage mixture.
Allow to sit a few hours or refrigerate overnight before serving for flavors to blend. I always drain before serving.

Do you want a Jello or something else?
Here is a good one for a group;
1 can peaches, drained
1 can fruit cocktail, drained
1 can cherry pie filling
or
another fruit-canned, or even sliced Bananas
Mix together and add 1 package pudding mix.
Can be made in minutes, and goes with about anything.
If you want a Jello, pm me, and I have thousands of good ones.
