Need strawbery rhubarb for pie or cobbler - help!
 
Pregnant lady coming for Thanksgiving dinner is craving strawberry rhubarb pie or cobbler. Her husband (our son - yes! that means our first grandchild!) is funny - telling us how interesting life is living with a pregnant wife...lol.

Anyway, it's November and I'm in northern NY where, of course, there is no rhubarb in the garden. I know I can buy frozen strawberries, but has anyone seen frozen rhubarb in the grocery store?

Or even canned strawberry rhubarb pie filling. Thanks so much for any help.

You can buy both ... frozen rhubarb ... and the canned strawbery rhubarb pie filling.

Now get that pie made and be a hero do your DDIL! :)

No frozen rhubarb in 3 stores here in the frozen north, BUT I did find a huge can of strawberry rhubarb pie filling at the bakery supply store! No quilting today - I'm in the kitchen! Happy Holidays to everyone.

The market I shopped at today has fresh rhubarb - yes ,here in the north part of Michigan. I'm sure your DIL will be happy.

Another recipe for this combination is to make it into a crisp. Just use the same combination or canned version and use
an applecrisp recipe for the topping.......no crust. I sometimes add a small package of Strawberry Jello to the filling. Nice flavor...adds some color also. Just mix the dry powder into the filling. To eat it warm with some ice cream or whipped
cream on the top is heavenly.

You are making me nostalgic, my grandmother's strawberry rhubarb pie was heavenly. I didn't know you could get strawberry rhubarb any other way. I'm going to have to look for the makings. Thanks.

I read you message and thought I had that reciept somewhere at home, but came across this and thought it may help

Rhubarb and Strawberry Meringues<o:p></o:p>
15 mins prep & 30min cooking
Serves 4
Filling<o:p></o:p>
8 stalks rhubarb cut 2cm pieces
4tablespoons sugar
2 teaspoons orange zest grated
250g strawberries washed and hulled
Preheat oven to 180° C<o:p></o:p>
Meringue<o:p></o:p>
3 egg whites
¼ teaspoons cream of tartar
3 tablespoons caster sugar
Filling
Place the rhubarb, sugar , orange zest and ½ cup water in a medium saucepan.
Bring to the boil, then reduce the heat and simmer for 10 minutes or until the rhubarb is nearly tender.
Stir in the strawberries, then transfer the mixture for four 1 ½ cup ovenproof dishes.
Meringue
Beat the egg whites and cream of tartar with an electric mixer until soft peaks form, then ass the sugar while still beating. Beat until peaks form and the mixture is glossy. Spoon over the rhubarb mixture and bake for 15 minutes or until lightly golden on top.

I visited mrs. Knott's chicken resturant once years ago that had a cooked strawberry rhubarb as a side dish. It was a big hit with me. I sometimes make it myself when I have company. Very easy and oh so good with a fried chicken meal.

My uncle and aunt visited one year during thier annaversary. I made this and I thought my uncle was going to cry. He said, " I haven't had this since I lived at home with mother". (My grandmother) Gave me the willy's. Another tradition I am carring on witout realizing it? LOL...
