Oatmeal Crispies Cookies--Mariah

A day or so ago, I saw someone requesting a recipe for Oatmeal Cookies. Might be a "day late," but these are Very Good. I have another one which is also good; a little more chewy, whereas this one is crispy.
1 c. shortening
1 c. sugar--granulated
1 c. brown sugar
Cream together and add; 2 eggs and 1 t. vanilla
1 and 1/2 c. flour
1 t. salt
1 t. soda
3 c. quick cook oatmeal
Optional;raisins, pecans,
Roll into balls and place on ungreased sheet. Sprinkle with sugar and flatten. Bake 350 for 10 min.
Remove quickly from baking sheet. Make 5 dozen.

Oh, I bet the shortening makes them really crispy. Yum!

I love crispy cookies. They give a great crunch and then just sort of disolve in the mouth....yumm. Thanks for the recipe. I'm gonna try it!
