Over cooked Chicken?

I overcooked boneless, skinless chicken breasts............do you have a recipe or something I can do with the pieces that are overcooked to save them from going into the trash? {other than tossing them out for the feral cats] I even wrapped them in bacon . . . . I just cooked them too long, Again! [Yes, I get distracted.}:thumbdown: |
Simmer them in a little bit of enchilada sauce them make some enchiladas.

I like to brine them overnight. Cook in oven with a little olive oil on 425°. Take their temperature and take out of the oven when they hit 180-185°. (5° below the poultry setting on the thermometer) Temperature is more important than time.
You could shred it finely, add BBQ sauce and make sandwiches. |

Chicken breast cut into pieces, mixed with celery bits and mixed with Miracle Whip or mayonnaise makes great chicken salad sandwiches. Shread the chicken and heat with a can of cream soup and serve over egg noodles.

I took them out at 145* but they are just barely over cooked. Soaking in enchilada sauce sounds good.......I,ve made chicken salad before so I will try enchiladas this time. Thanks all. |
I was going to say chicken salad also. Nothing worse than dry chicken breasts- they are dry to begin with!

I would cut them into small pieces and serve them with tortellini and alfredo sauce.

I make chicken and dumplings or chicken pot pie with not so great baked chicken. I always use a food thermometer for all my cooking, especially breads. This is the best one I have used. http://www.thermoworks.com/Classic-Thermapen. It makes a great wedding present.
