Pancake Lovers : This is fantastic
 
This recipe is from Southern Living November 2015 magazine.

The pancakes are absolutely delicious, my DH cooks them to perfection and I will share this recipe from the magazine word for word. I follow it exactly and our pancakes are melt in your mouth delicious.

Pancakes:

1 3/4 cups of all purpose flour
2 tsp sugar
1 1/2 tsp of baking powder
1 tsp of baking soda
1 tsp of salt

Mix these in a bowl together, sift if you want.

In a separate bowl, whisk together 2 large eggs and then add two cups of buttermilk (I use real buttermilk)

Gradually add to the flour mixture, then melt 1/4 cup of butter and gently add into the flour/buttermilk mixture. Batter will be lumpy. LET BATTER STAND 5 MINUTES.

Pour about 1/4 cup of batter for each pancake onto hot buttered griddle and cook 3-4 minutes until tops are bubbles and edges are dry. Turn and cook another 3-4 minutes until golden brown. Place pancakes in a warm oven 200 degrees for up to 50 minutes.

I make these also. They are wonderful. I do however, add a teaspoon of vanilla extract to the batter.

Sprinkle with some fresh blueberries on the first side, or add some cinnamon sugar and grated apple, or some crumbled bacon. Pancakes are a blank canvas just waiting to be made delicious by adding some little surprise! I also like to make old fashioned sugar syrup with vanilla to put on them. We always have a variety of home made jellies and jams, such as corncob jelly, green tomato jam, monkey jam etc. Love the unexpected flavors.

It's the buttermilk that stops me. I will not drink it! So I hate to buy it just for a recipe then throw the rest out......

I also hate buttermilk and will not drink it. I buy a quart and then have pancakes for 4 mornings for my husband and I. These pancakes are just so good if...you love pancakes and I do.

You can add lemon or vinegar to plain milk and make a substitute buttermilk, no need to throw any away.

I always add coconut oil to my pancakes but plan to try this recipe. Thanks for sharing.

Regarding buttermilk. I used to have a can of powdered buttermilk and would mix up just what I needed for a recipe. Don't have any now. Hope it is still on the market.

yes Suz, its still on the market , near the powdered milk section or in the baking isle.
