Pasta primavera with italian turkey sausage
PASTA PRIMAVERA WITH ITALIAN TURKEY SAUSAGE
I can't remember where I got this recipe from but it is quick, easy and delicious! I only use about a tbsp or so of the oil it calls for. Original recipe yield: 8 servings PREP TIME 20 Min COOK TIME 30 Min READY IN 50 Min INGREDIENTS 4 servings of uncooked whole grain pasta (Barilla brand) 1 pound sweet (OR hot) Italian turkey sausage, cut into 1/2 inch slices 1/4 cup olive oil, divided (I use about 1-2 tbsp total) 2-4 cloves garlic, diced 1/2 onion, diced 2 small zucchini, sliced 2 small yellow squash, sliced 6 roma (plum) tomatoes, cut into large chunks 1/2 -1 green bell pepper, cut into large chunks 8-10 leaves fresh basil (or Italian Seasoning) 2 teaspoons chicken bouillon granules 3 - 4 tbsp water 1/2 teaspoon red pepper flakes 1/2 cup grated Parmesan cheese DIRECTIONS Bring a large pot of lightly salted water to a boil. Place pasta in pot and cook to package directions; drain. Place sausage in a large skillet over medium heat and cook until evenly brown; set aside. Heat half of the oil in skillet. Stir in garlic and onion, and cook until tender. Mix in zucchini, squash, tomatoes, bell pepper and basil. Add bouillon and, if needed, the water. Season with red pepper. Stir in remaining oil. Continue cooking 10 minutes. Mix pasta, sausage and cheese into vegetable mixture. Continue cooking 5 minutes, or until heated through. Serve with garlic bread. |
