These Baker's Peanut Butter Oatmeal Chocolate Chunk cookies I found on allrecipes.com are really good! I added one cup of chopped walnuts. We'll have cookies for lunches for a while now! This is the regular recipe. I doubled it.

1 cup flour, 1 cup old fashioned or quick cooking oats
1/2 tsp baking soda, 1/4 tsp salt, and 1/2 tsp baking powder. Mix all of these in a bowl.

IF YOU LEAVE THE BAKING POWDER OUT, THEY WILL BE THICK AND NOT FLATTENED OUT.

1/2 cup butter softened, 1/2 cup white sugar, 1/2 cup packed light brown sugar, 1/2 cup peanut butter. Mix these in the bowl of your mixer until smooth. Add one egg and 1 1/2 tsp vanilla.

Gradually add the oat mixture to the sugar mixture to blend. Stir in 6 oz chocolate (recipe says Baker's Semi-Sweet coarsely chopped, but I used Ghiradelli large chips) (Add walnuts here if you like.)

Make tablespoon size balls of dough and roll slightly to compact them - this way they won't fall apart too easily. Put on ungreased cookie sheets 2 inches apart and bake at 375 degrees for 10-12 minutes until just starting to look golden brown. Cool completely on wire racks after allowing to sit one minute on the cookie sheets.
