Pea Salad with Jicama, curry & almonds
 
Earlier I posted about Jicama Slaw and there were a few members who said they loved Jicama. I thought I would share the first recipe I ever used that introduced me to Jicama. (it reminds me a little bit of water chestnuts) It was from a 5-9 a day for better health article years back.

Serves 4

2 cups thawed petit peas
1 cup peeled and chopped jicama
1 heaping tablespoon finely chopped purple onion
2 tablespoons roughly chopped toasted almonds
1/4 cup light mayonnaise (I just use regular Miracle Whip)
1/4 cup nonfat plain yogurt (I use regular)
1 tsp mild curry powder
pinch cayenne
1/4 tsp salt
1/4 tsp pepper

1. Place thawed peas, jicama, onions and almonds in a bowl.

2. Combine the mayo, yogurt, curry, cayenne, salt & pepper. Add to veggies and mix well. Yummy!

I don't buy it very often so didn't know whether to buy the big one or small one.... I bought the big one :D so that's why I was searching out other recipes to use it up. Hope you enjoy the salad.

I might double the recipe to use up the whole Jicama Or make sticks and dip it in hummus. Thank you, it sounds like a good way to add fiber.

No, it is a crunchy veggie, similar to water chestnut only a tad sweet .... I'm sure there is something else similar someone can come up with? I just googled "how to describe the taste of jicama" and this is the reply... not edited for grammar.

"Jicama is relative of the potato family and looks similar to a turnip or a large radish. The taste is best described as a cross between a water chestnut and an apple. Jicama can be eated raw or cooked and has a sweet, nutty flavor with a crisp texture that is retained if cooked only briefly."
