Peanut Butter Cookie
 
I have a cousin recently placed in a nursing home with some sort of dementia. He loves any kind of cookie with peanut butter in it. All I have is an old-fasioned Betty Crocker type where you criss/cross it with a fork. I just wondered if anybody had a newer one that they would share?

I sometimes make a chocolate cookie or choc chip recipe cut back a little on butter and add peanutbutter bake as usual

Easy Peasy Peanut Butter Cookies

2 cups peanut butter
2 cups sugar
2 eggs, slightly beaten
Optional add ins (I used peanut butter chips)

Mix all of it together to the point that you can scoop it and roll into a ball. Roll into a ball about the size of a small walnut and place on an ungreased cookie sheet.

You can sprinkle the tops with a little more sugar, or not. It's up to you! Place in a preheated 350 degree oven for 10 to 12 minutes. Don't over bake or they will get too hard. This recipe makes 2 dozen cookies.

I rolled out the same peanut butter dough as used for criss-crossed cookies using powdered sugar instead of flour and used cookie cutters on it. They turn out great...practice until you get the doneness you like...some like them soft and some like them crispy. If you want to add more flavor, you can frost with choc frosting or melted chips.

Peanut butter Cake mix Cookies
 
We like these real good.

2 eggs
1/4 cup brown sugar
1 cup peanut butter
1 box dry cake mix [ yellow is best]
1/2 cup veg. oil

Mix all together and roll in balls and mash down with a fork.
Bake 10 minutes at 350 degrees. This makes about 35 cookies

This makes a LOT, but you could cut it down. The recipe I used to make for DGS and DH was called 'Monster Cookies'...can't find it, but this is similar.
DISH PAN COOKIES
12 eggs...........................................3 pounds peanut butter
2 pounds brown sugar .....................8 t. baking soda
4 cups white sugar ..........................1 1/2 t. salt
2 T. vanilla.......................................18 cups oatmeal
1 T. corn syrup
1 pound M&M candies
1 pound chocolate chips
Preheat oven to 350 degrees. Place all ingredients in a dish pan. Mix well with hands. Drop onto cookie sheets (6 to a sheet) with ice cream scoop; flatten slightly. Bake for 12-15 minutes, being careful not to overbake. Cool on wire rack.
NOTE: For a real peanut butter lover, you could sub peanut butter M&M's and peanut butter chips. I think my recipe also had peanuts.

Here is one that has been all over Pinterest, no flour.

1 cup sugar




    [h=2]1) Preheat oven to 375 degrees F [/h]2) Mix all three ingredients
    3) Scoop out the dough and roll it into one inch balls
    4) Place on prepared cookie sheet 2 inches apart
    5) Use a flat bottomed cup to somewhat flatten each dough ball out or press flat with a fork
    6) Cook for exactly 9 minutes
    7) Once removed from the oven, let the cookies cool for a few minutes before placing them on a cooling rack
    8) Recipe should yield about 36 cookies
    *Best to eat after they cool (they are firmer)

    These are yummy, no-bake and taste like a peanut butter cup, more a candy than a cookie. You can use a cookie sheet, or for thicker cookies, a 9x13 pan.

    2 C peanut butter
    3/4 cup butter or margarine (soften to room temperature)
    3 3/4 C powdered sugar
    3/4 C brown sugar
    3/4 t vanilla
    6 oz chocolate chips
    2 T butter

    Combine first 5 ingredients until smooth. Press into cookie sheet.
    In a saucepan, melt the chips and butter. Spread over mixture in cookie sheet. Chill at least 2 hours before cutting into small squares.

    One Cup of Everything Cookies - Makes 5 dozen soft drop cookies
    1 cup butter (or margarine)
    1 cup brown sugar
    1 cup white sugar
    3 eggs
    1 cup peanut butter
    1 cup white flour
    1 cup whole wheat flour
    1 cup oatmeal (or rolled oats)
    1 cup coconut
    1 tbsp. baking soda
    1 cup chocolate chips
    1 cup raisins
    Beat butter, sugars, eggs and peanut butter until creamy. Mix in flours, oatmeal, coconut and baking soda. Stir in chocolate chips and raisins. Drop by spoonfuls on cookie sheet and bake at 350 for about 10 minutes (varies based on size of spoonful!)

    Substitute whatever you like but hold true to the name of the recipe!
