This salad dressing is for potato salad and macaroni salad

1/4 cup of cider vinegar
1/4 cup of water
1/4 teaspoon of salt
1 cup of mayonaise (Miracle whip will make the dressing tangier)
1/2 cup of sugar
1 1/2 Tablespoons of prepared mustard
2 eggs

Combine all ingredients and either mix well or whip with a mixer. Cook over medium heat until thick and bubbly.
Poor over cooked potatoes, celery, onions, celery seed and hard cooked eggs.
For macaroni salad add green pepper, celery and onion and celery seed, and carrots.

Janet, this also sounds great and I am going to try this too. Keep those recipes coming anytime girl, as I LOVE PA Dutch cooking!

My mother makes the same thing except leaves out the mayo. Cook the other ingredients then add 1 cup sour cream or in a pinch 1 cup canned milk.
So good!

I have been doing this for years; however, you do not have to cook it. My Mom who was Dutch taught me how to make dressings.

Thank you. GG

Hi,
I usually make about 4-5 large russets plus add celery, onion, hard boiled eggs and celery seed. It is a good idea to keep the 5th potato at the side until you have everything together. Then if you have a enough of the dressing you won't have to much potato. Remember, the dressing is warm and so are the potatoes..and they will absorb the dressing.
I hope this helps! You can make macaroni salad with this also.

That is the same recipe I use....from Perry County PA!!!

This is the recipe closest to my Grmothers...who was PD.From TOH

1 cup white sugar
1/2 tsp salt
2 eggs
1 Tbl mustard
2-4 tbsp. flour
1/2 cup vinegar
lump of butter
2 cups boiling water

Put vinegar and water in double boiler and bring to a boil. Beat eggs and sift the dry ingredients into them. Blend thoroughly and add slowly to water and vinegar. Stir until thick and cook slowly for 10 minutes.

I use less sugar, starting with 1/2C, then adding a bit more if needed.
Chop cooked potatoes, onion, hadr boiled eggs & celery & celery seed.Add dressing to taste, along with black pepper. You can add 1/2C LF sour cream if wanted.
