Please do give me some suggestions and/or recipes for tonight's supper.
Chicken Thighs .... thawed and waiting for something to be done to them. Preferably oven baked, so I can toss them in and forget til they are cooked. Of course, I could just roast/bake them .... though I'm hoping all the great Quilter Cooks can inspire me to something else! THANK YOU!!!!!! |
Marinate them in Italian Salad dressing...or dredge them in dry Ranch dressing for a twist...
I've covered them in Cream of Mushroom (or chicken...or celery) soup and baked them that way... |
Remove the skin if you want, dip in beaten egg,then in flavored bread crumbs or crushed corn flakes, bake till done.

You can boil up the chicken....then when it is done, chop it up into small peices, spray a baking pan, put the chopped chicken, any kind of canned or frozen veggies, chopped onion, cream of chicken soup or mushroom soup really doesnt matter what kind of cream soup some milk to thin out the soup, and top with a crust Or canned biscuits. and bake till the biscuits are browned.

ok here are a few ideas.
#1 remove the skin dust with garlic powder black pepper and a bit off sea salt put in pan with carrots onions potatos and fill pan half full off a mild red wine. you now have a comepleat supper and you can go a nd sew. #2 put them in a pan cover with bbq sauce add a bit off water and roast. have a good supper |

chicken, diced tomatoes, sliced olives, mushrooms with sauce all in one pan, bake it til done and serve over noodles......... |
Here is a quick one: use 1 env. ranch dressing mix and
1/4 cup bread crumbs - mix dressing mix and bread crumbs together in plastic bag and drop chicken into the bag and shake to coat. Put in hot oil to brown, then turn down and add about 1 l/2 cups of hot water and cover with lid. Slow cook until chicken is done (about 45 mins.) You may have to add a little more water if it cooks to dry. Serve with mashed potatoes and spoon the gravy over them. Really good. |
Prepare a package of dressing/stuffing... add a little milk to can of Mushroom soup .... remove skin from chicken parts.
Put thin layer of dressing in bottom of 9 x 13 pan, next add chicken parts, Lay remaining dressing on top, then cover with diluted Mushroom soup.... Cover with foil, bake in 350 degree oven 1 and 1/2 hour (or so).... Quick to prepare, no "watching" .... delicious. |

I see some more ideas came while I made and ate supper!
While the chicken baked, I also did two batches of cookies, baking one tray at a time .... and continued the marathon after supper. So .... I had some bread that I was planning to crumb and have in the freezing for stuffing. It became fine crumbs. Mixed in some spices/herbs/salt/pepper. Breaded the chicken and baked with foil on top. Nothing too exceptional ... though til it was suggested, it was probably the furthest from my mind for possibilities! Cooked some rice. Frozen peas. And some homemade cranberry sauce. Delightful supper .... with a warm cookie for dessert! :0) And now .... lots of chicken leftovers for the next few days and the freezer! Thanks everyone ... and I'll use some of these other ideas another time too! |
Just a thought.If you like soup....put leftover chicken in slo cooker or big pot on stove....add some veggies.I put mine in slo cooker last eve....along with a couple stalks of celery,an onion,few carrots & lots of seasonings.Filled with water,brought it to boil,then let it simmer overnt.
Will strain & discard the veggies & bay leaves,then when cold,will remove most of the fat,& freeze in portions I use for making soup.The meat will be used for today's dinner.You can get good broth using cooked or raw meat.So handy & such good flavor. |

Another good "next time" recipe...
Make stuffing, either Stove Top (I got the recipe from the box) or homemade, and add an egg to it mixing it well. Pound out the chicken to about a quarter inch thick, place some stuffing on the center of it and roll it up. The recipe calls for a can of Cream of Chicken or Mushroom soup poured over the top and bake at 350 for 45 minutes or until a meat thermometer reads 165. I make gravy from chicken stock and use that instead. |
Chicken cachitoree - or however you spell it.. tomatoes, onions, peppers if you like them. carrots, celery, mushrooms...baked , and I put some mozerella cheese on top the last few minutes - just because... serve with noodles, or rice, or ravioli.. and of course, dessert - sour dough bread.. yummy..

have the same problem,and no real time to monkey around. so, here's what we're having:
1. use a deep casserole, 2. skin your chicken pcs if you want., 3. Open a can of cream of (can be mushrm, cheese, chicken, celery, any cream soup, any brand) dump contents in sm bowl 4. measure 1 soupcan of rice (white, basmati, jasimine - if you use wild rice use more water ), spread in bottom of casserole sprayed w/ cooking spray. 4. add any veggies you like that match your familys likes and the soup flavor you picked - I chop up some carrots, celery, onion, green peppers, small chop spread on rice. 5. add 1 can water (or you can add chicken broth made w/ a cube here) stirred into soup in bowl. just pour it over. 6. nest the chicken pieces on the rice veggies, sort of wiggle them around 7. salt n pepper the chicken, add a few pats of butter and cover tight w/ foil. cook about an hr at 350Deg serve w/ a salad, rolls/bread, and maybe a nice side veggie. quick. reads longer then it takes to make. I use 1 can of rice and 2 pcs of chicken for the 2 of us. The "formula" for rice is: 1 part rice to 2 parts water in a covered pot. just pour the rice into a pot of water, turn it up to a boil, then put a lid on and turn it almost off for about 20 min, and never lift the lid to see how its cooking!! its steaming. all rice cooks this way except wild rice which takes more water for some reason. for a bigger family just measure out more rice You can also cook thin porkchops this way, ham steak, hamburgers. just always have some kind of cream soup in the cupboard, and boullion cubes. I have chicken, beef, ham, and vegetable stock cubes on hand. it is also very tastey when you make the rice w/ cream of shrimp soup and frozen english peas, or peas/ carrots, or you can add chinese style veggies/5 spice powder. You dont need to cook it so long. Just use frozen precooked shrimp thawed under running water and just mix it in at the end before serving (cus if you put shrimp in the over for even half an hr at 350d it will turn into rubber!) also, w/o meat in it you can cook the rice in a pot on the stove. Just measure the amt you want to cook, add small dice veggies, any spice you like and the cream soup and amt of broth per formula and cook as you were just making plain rice - heat to a boil, cover, turn down to just simmer/low. wait 20 min. (rice is usu done when you take the lid off and the water looks gone and the rice seems to have "holes" in it.) and, dont forget tomato soup is a cream soup - it great w/ tomatoes cut up in the rice and beef broth for the water. Im lucky cus for some reason hubs loves rice and will eat these combos once a week. sharet |
