I made this last night for dinner and me and hubby really liked it:
1 16oz polish sausage (I used turkey)-cut into chunks
5 medium size potatoes peeled and sliced
1 medium size onion - sliced
1 can cream of mushroom soup
Shredded cheese - (I used mixed colby and monterey jack)
Salt and Pepper to taste

In a large size casserole dish (13x9) layer all the potatoes
Next layer all the cut up sausage
Next layer all the onions
Pour mushroom soup over all the top and spread around to try and cover all
Cover with foil paper and bake at 350 degrees for 1 hour. Remove foil paper, cover with shredded cheese, and bake uncovered for about 5 to 8 minutes more, to melt the cheese.

The casserole makes a meal in itself, but we had a small green salad with it. Really good and easy to make.

Sure sounds good. If your camper has an oven, sounds like an easy dish to make with just a few ingredients.

I made it night before last and we loved it! We had the leftovers as a side dish with ham last night! I have a new favorite!!! Thanks so much for posting this!
