Poor Man's Soup - quick and never the same twice
 
This is a soup we used to have often when our children were young. It's really not a recipe, but a compiling of ingredients from the fridge.

Serves as many as you need it to (fills an 8 quart pot),

1 pound of meat (ground beef or stew meat)
2 tablespoons of oil or bacon grease
2 cups of diced potatos
2 cups of diced carrots
2 cups of diced celery
1/2 cup diced onion
1 small can sliced mushrooms
2 cups diced cabbage
Seasoned Salt
pepper
3 beef bullion cubes
2 packages of brown gravy mix
1/4 cup catsup (or 1 small can tomato sauce, or 1 cup spaghetti sauce)
4 cups water (more as needed
1/2 cup dry egg noodles

Cook the meat in the oil (if you don't use lean ground beef, you can omit the oil), when almost done, add the vegetables until the onions are transparent.
Add everything else, except the noodles, seasoned salt & pepper.

Cook until almost done, add the noodles...taste the broth and add Seasoned salt & pepper to taste.

Make a pan of corn bread (we use the Jiffy corn muffin mix)...and dinner is served. This works well in a pot on the stove...if doing in a slow cooker...brown the meat first.

You can use chicken or turkey instead of the beef...I use chicken or turkey gravy and omit the catsup/tomato sauce.

We also add canned corn or hominy, or green beans...whatever is in the cabinet or fridge.

My niece omits the onions...she is allergic. Her sons don't like the cabbage...so they leave that out also.

Smells really good too!

Yeah my Granny made that and I use her recipe and make it also. We all love it. We don't add noodles or brown gravy mix. I do use tomotoes and or sauce.

We also make a Must Go Soup, that is quick and never the same twice.
In that we put in anything from our leftovers from the week. All meats and vegies.
add more veggies if needed and tomatoe sauce.

Reminds me of my Grandpa's Kitchen Sink Soup. Yes that is what he called it because he said , "it has everything in it but the kitchen sink.":D It was Yummy too!

Mine you can...I like to brown the meat first, but you don't have to.
