Potato Pomegranate Salad
 

I love traditional, American potato salad, but it's very high in calories and fat, so I've been looking for a fresh, healthier alternative. I found this recipe at https://www.vegrecipesofindia.com/aloo-anardana-salad/. It's an Indian version of potato salad with pomegranate seeds, tomatoes, onions and mint. I love putting mint in salads and other dishes and I still have a couple of pomegranates from the garden, so I'm going to give this dish a try! Let me know if you try it too.

I'd love to try it. When my Grandmother Ruth would start pulling her hair out from so many kids around she'd give us each 1/2 a pomegranate, would keep us quiet and busy for hours.
