Potato Soup (easy way)
 
Chicken broth. 28 oz
Cream cheese. 8 oz (cubed)
Cream of chicken soup. 1 can
Chopped onion. (1/3 cup)
Chopped leeks (1/3 cup). Optional
Black pepper. 1/4 tsp.
Southern style frozen hash browns. 30 oz.

Combine in crockpot on high. When it starts to bubble, turn to low. Cook all day. Starts out thin but will become thicker. Can add cubed ham or browned ground beef last hour or so.

This is my favorite. I toss in some chopped ham and a can of corn, drained of course, and have a pot of Potato Corn Chowder! All you need is a cold day and loaf of home made bread and it is perfect. My recipe suggests adding the cubed cream cheese the last hour. What ever works! It is yummy!

I normally start p soup from scratch, but this sounds so good, and easy. I have all the ingredients on hand (except leeks), and the added corn/ham makes it so hearty. THX for sharing!

This is perfect for today. Off to the store, will put in crock pot and sew the rest of the day. Sound good? Sounds perfect to me!!!!

I got this recipe from the Uni of Neb back in the 70's. Cubed potatoes, carrots, celery, onions and whatever else you might have leftover in the fridge, add water just enough to cover. Cook till tender, don't drain the water, add powder milk but I don't keep that in stock so just add some coffee creamer instead, add a can of cream corn, add 8 oz. of cheese (your choice), salt & pepper to taste. I make a stock pot full of this stuff, put into 2-1/2 gal freezer containers, feed on 1 during the week and put the other one into the freezer for another time. They gave it the name "Midwest Chowder" back in the days.

I've even been known to make potato soup with packaged dry mashed potato mix when in a crunch & DH is desperate for potato soup. :) Also, if I don't happen to have enough milk I'll will substitute with coffee creamer. I use that for a lot more things than just creamer for coffee.

I’ve shared my recipe here for Scalloped Potatoes made with coffee creamer ....oh so good !
Some bread machine recipes call for powdered milk. Now I will sub coffee creamer for powdered milk ! Thanks !

Forgot to mention I add cooked ground beef to my Midwest Chowder recipe at the end.
