Pumpkin Baked Oatmeal
9x9 glass pan - grease but no spray. Oven 375 for 35-37 minutes
Bowl #1. Whisk together 2 cups old fashioned oats 2 tsp pumpkin pie spice 1 tsp baking powder 1/4 tsp salt Bowl #2. Whisk together 2 lightly beaten eggs the add: 1 cup puréed pumpkin (not pumpkin pie mix) 1 1/3 cups milk or Half & Half (I use a combination of both) 1/3 cup honey (half real maple syrup & half honey is what I use) 2 tsp. Vanilla extract Mix wet & dry. Fold in 1/4 cup raisins or craisins. Pour into baking dish & drop 1/4 cup chopped walnuts on top. Bake to golden brown top & test center. Important to let rest 5-10 minutes. Keeps 4 days. Reheats in microwave just fine Top with whipped cream, yogurt, fruit etc or as is. Next time I’m going to experiment by replacing pumpkin with 1 cup mashed soft banana & a big spoon of peanut butter. Change up pumpkin pie spice to 1 tsp cinnamon. |

I need to make another batch of oatmeal for breakfast in the morning. I am going to make this later today and divide in small bowls for each day. I have some squash thawed so I will 'spice it up' for this.

tranum, do you think this can be made in a crock pot, I would make 1/2 of the recipe as it is just me to eat it.
I made as printed and did add the flax meal with pecan pieces on top. Had to give some away to my contractor guy who came to help with power outage during this historic winter storm in the Thumb of MI. It is so creamy with the egg addition and really would like to use my mid-size crockpot. I have several blended fruits in the freezer to try them in place of the pumpkin. tranum, thank you for sharing your recipe. I made yesterday and it is simply fabulous. I did not have enough honey so used 1/3 cup brown sugar instead and apple pie spice instead of pumpkin spice. The only 2 changes I made and I just love it. Next time I may add more raisins as 1/4 cup didn't seem to be enough.... lol.

I’ve played with this and used different ingredients. Today in place of pumpkin, I used diced apple so I’ll see how that tastes tomorrow. I also replaced 1/8 cup of oatmeal with same amount of ground flax seed. One day I added some mashed chick peas. They’re loaded in fiber. We like baked oatmeal warmed 30-40 seconds in the microwave.
