I got this recipe from the newspaper a long time ago. It calls for browned stew meat (or a roast, cut up) but is cheaper to use ground beef.
1 medium onion, finely chopped 1 small bell pepper, finely chopped 1 TBSP oil 2 pounds ground beef 1 pkg chili mix seasoning, like Schillings 2-3 cans dark red kidney beans undrained 1 LARGE can diced tomatoes undrained 1 can corn, drained. 1 16 oz jar medium salsa (I use the Walmart Thick and Chunky brand) salt and pepper to taste Saute onion and pepper in the oil til softened. Add beef and brown. Add spices and stir to combine. Adding the spices early and getting them hot makes for more flavor. Add all canned goods and the salsa, stir to combine and cook on medium high til it starts bubbling, then turn down to simmer and cover. Simmer for at least 45 minutes to get good flavor. We top ours with shredded cheddar and a big TBSP of sour cream. |
